This afternoon, I had the bejesus scared outta me!!
Typically, Jay and I keep the door to our bedroom closed, in an attempt to keep any extra Cody fur out of the room. It helps a lot with my whole allergies & asthma situation.
Occasionally, however, we’ll open the door for a bit to let the fresh air circulate; and since today was a beautiful day, I had the windows opened and decided I’d let the airflow do its thing.
Well, as I was walking back into our bedroom with a hamper full of laundry, I happened to look down, only to see a sneaky set of eyes fixated on me…
I don’t know why it scared me so bad, but my goodness he is sneaky!

Tonight’s dinner was somewhat of a random assortment. I was really craving a nice, baked sweet potato, so I started with that and just went from there.
To get some greens, I actually heated up a box of frozen green beans & almonds. Sometimes, frozen, steam-fresh veggies are great! I had about 3/4 of the package.
Then I wanted some extra source of protein, so I decided to toast up another slice of my Nature’s Pride Hearty Wheat with Flax bread and topped it with some peanut butter.
And, of course, the star of tonight’s show! I can’t even tell you when the last time was that I had a baked sweet potato. 95% of the time, sweet potatoes are consumed as fries and that’s how I want ‘em.
But tonight’s sweet ‘tater totally hit the spot. I sprayed the outside with some butter spray, sprinkled some S&P, poked it with a fork a few times, and baked it in the oven at 350 degrees for one hour. It was so nice and soft that I didn’t even need a knife to cut through it!
Of course, the toppings didn’t hurt either. I generous dollop of nonfat Greek yogurt, a sprinkle of brown sugar and cinnamon, and a drizzle of maple syrup made this a potato to remember.

Ahhh – Cody is a total creeper! I love the picture of him with just his head popping out from underneath the bed. Love it. Sweet potato fries are the way to go – I also like sweet potato & black bean chili. Have fun bowling tonight, Courtney!

Great minds must think alike–I did a Twice Baked Sweet Potato tonight! :) I love fries, but this twice baker gives them a run for their money!
Cody is too cute. And I’m not a cat person, so that says a lot coming from me! If I could guarantee he’d be as cute as Cody, I’d consider getting a kitty for myself!

My favorite way to eat sweet potatoes is the way my mom makes them for Thanksgiving. Instead of the traditional sweet potato casserole, this one has a topping of brown sugar, coconut and pecans. It is addicting! What’s even better is mixing the left over sweet potato casserole with Irish potatoes to get mixed mashed potatoes (white and sweet). SO good!

LOLOL omg Cody is too cute. I die… I’m surprised that Cody always stays still for your photos, since my pictures of my cat always end up being a blur of fur.
