Good evening, friends! Forgive me if this post seems like I’m a little distracted…it’s because I am!
I’m watching The Bachelorette while quickly trying to type up this post, so it might be a quick one. I’m sure you all understand. ;)
This afternoon, I got to meet up with four of my favorite girls for a little scrapbooking!!
If you remember Joelle’s Bridal Shower, part of the party was for the guests to make a scrapbook page for Joelle & Kyle. Well, today Jo got to work on finishing up that book, while the rest of us got crackin’ on a couple projects of our own. If you notice the scrapbook on the bottom of the photo below, you mayyy just happen to recognize that happy couple. ;) As a wedding gift from Joelle, Rachel, & Kathryn, they created a special “Courtney & Jay” scrapbook for the two of us. I still have a couple finishing touches to complete, but once I do, I will definitely be sharing it with you all!
Joelle & Rachel are both serious scrapbookers. This is just a small portion of the supplies that these two girls have!
Dinner
After a couple hours of cutting, cropping, & gluing, we had all worked up quite an appetite. We had originally planned on a restaurant down the road from Rachel’s apartment, but realized as we were pulling into the parking lot that they were closed. No problem – a “Plan B” was quickly devised, and the 5 of us headed to Pizzeria Uno.
It had been quite a while since I’d been to Pizzeria Uno, but I was quite happy with a few of the selections I saw on the menu. I eventually ended up deciding on the Roasted Vegetables & Feta Wrap, which was “a whole wheat and flaxseed tortilla filled with roasted vegetables, caramelized onions, tomato, feta, lettuce, and balsamic vinaigrette.
This wrap was absolutely phenomenal! The flavor of the vegetables, combined with the savory feta & balsamic was out of this world. I devoured the entire thing!! :)
For my side choice, I was quickly intrigued by one of the items on the menu: the Farro Salad, which was “a whole wheat grain, cooked like pasta and mixed with diced tomatoes, cucumbers and balsamic vinaigrette.” Again, totally delicious, and eaten in its entirety. This meal had nothin’ on me! ;)
