Packed & Prepped In Less Than 5

By Courtney Leave a Comment

Alright folks, it’s Monday, so I’m sure you’re probably expecting to see a “Monday Usual” on the horizon, right?

Ahhh haaaaaa! Looks like I fool you today, because I decided to switch things up a bit! Mwahahaha.

Thanks to having some leftover roasted veggies, lunch was prepped and packed all in about five minutes…what’s not to love about that?!? ;)

I started with a Spring Mix base, topped it with a BUNCH of leftover veggies, some roasted red peppers, and reduced-fat feta cheese.

IMG_5139

Simple, yet totally delicious! :-D

IMG_5140

I also packed up some Kashi Honey Sesame crackers (which I may or may not have a slight addiction to…)

IMG_5141

And a pretty gala apple. I think behind a golden delicious, galas are probably #2 on my list. :-P

IMG_5142

I’m definitely excited about this combo today!

Question for the Afternoon:

What’s your favorite type of apple?? :-P

I'm going to have to back the ladies who chimed in with Honeycrisp apples. They're crispy, sweet, and piece of heaven. Yum! And - let's not even talk about how good they are wrapped in caramel. Dangerous but excellent.
