Happy Friday Blog Friends! Seriously, I just love Friday’s — there’s so many fun things to look forward to! :)
After sleeping off my sugar coma, I woke up feeling much more refreshed and ready for a workout. I think I may have actually had a little spring in my “roll out of bed” routine this morning. ;) I did 45 minutes on the treadmill, alternating 1 min @ 7.5-8.0 mph with 2 mins @ 4.5 mph on a 4.0 incline. It wasn’t super hardcore, but it felt great!
Breakfast this morning was ready in about 2 minutes flat…thank you overnight oats!

Last night while prepping my lunch for today, I figured I’d go ahead and make breakfast too. Today’s overnight oats were pretty much an “everything but the kitchen sink” combo:
-1/2 cup oats
-1/2 cup vanilla almond milk
-1/2 cup water
-1/2 scoop Chocolate whey protein powder
-1/2 smashed banana
-1/2 tsp vanilla extract
-small scoop fat-free ricotta mixed with honey
-blueberries
-dried cranberries
-cinnamon
This morning, I simply took the bowl out, gave it a stir, and crumbled up 1/2 a piece of homemade blueberry banana bread to top things off.
Apparently, I like things in “1/2’s”, don’t I? ;)
I’m not positive how I felt about adding the chocolate protein powder. Some bites I was totally diggin’ it, and other bites were kind of turnin’ me off. I think I might pass on it next time — I like the idea of adding the extra protein, I think I just might have to invest in another flavor, like vanilla or something?
Today is also Coffee Friday as you know, so I’ll be grabbing one of these on my way into work! LOVE Coffee Friday :-D

Since I have kind of a busy day today (we’re having a picnic outside in the BEAUTIFUL 85 degree sunshine 8) ) I’ll give you guys a peek into my lunch a little early. :)
After yesterday’s sweets fest, I wanted nothing but veggies…LOTS and LOTS of veggies. But when I opened the veggie drawer, I was presented with a lonely head of romaine lettuce and some grape tomatoes. Oh crap…
So, I went ahead and started with what I had, also adding in some black beans & some reduced-fat feta.
I knew that this alone was definitely not going to cut it, so I went to my second best option — the freezer — and came out with this:
Frozen veggies can actually be a very healthy option when fresh are not available (which I just talked about in my Examiner post earlier this week). So I heated these babies up in the micro, let ’em cool, and topped off the rest of my salad.
Now THAT’S more like it! :-P I also mixed up a little dressing with some balsamic vinegar, a drizzle of EVOO, and a sprinkle of rosemary parmesan bread dipping seasoning (which I’m finding works GREAT for a quick homemade vinagrette).
There’s going to be some other healthy snacks today that I’m sure I’ll nibble on during the picnic, so I didn’t bother to pack anything else with me.
So, is anyone else as excited as me about Toy Story 3 coming out today??
I guess I’m a total kid at heart, but I absolutely LOVE Toy Story! That Mr. Poatohead gets me every time. ;) I’m really hoping I get a chance to see it at some point this weekend. (*hint hint* – Hubby)
