Happy Thursday! :-D Can you guess where I was this morning?!?

BodyPump!

It’s actually been weeks since I last attended a BodyPump class, so I was actually pretty darn psyched about going (despite the 5:45am start time!) :shock: This is the first time I’m attempting an early morning gym trip with having to go straight to work afterward, so it could prove to be an interesting morning. I’m keeping my fingers crossed for a smooth routine!

Knowing I wouldn’t have time to come back home after the gym before heading to work, I made sure to get everything prepped last night (including this post). How’s that for organization for ya. ;)

Included in my prep was a terrific bowl of Overnight Oats In a Jar. Jay actually finished off this jar about a week ago, and I totally forgot that I told him to leave it in the pantry empty for me. I thought it was full!

In the jar:

  • 1/3 cup oats
  • 1/3 cup vanilla almond milk
  • 1/4 cup water
  • 1/3 cup pumpkin
  • 1/2 smashed banana
  • small slice Cinnamon Date Manna Bread
  • Cinnamon

    Banana Oatmeal Chocolate Chip Cookies!

    They’re baaaaaaack! I saw the rest of the batch hiding out in the back of the freezer last night and decided I had waited long enough. (So glad I did that, by the way.) ;) I am happy to report, they are just as tasty as they were on day 1. Yesssss.

    ****On a quick side note, the Caramel Swirl No Pudge brownies totally ROCKED MY SOCKS!!!!! I had to restrain myself from eating more than one. They were so gooey, chewy, and incredibly flavorful…I was totally impressed, especially considering they’re a fat-free brownie! They’re definitely a MUST-TRY in my book!****

    Question for the Morning:

    When was the last time you stopped rushing around and genuinely relaxed??

    I wish I knew the answer for this one……I think that’s my cue to take some Courtney Time!

      Hey Courtney! I keep seeing overnight oats with pumpkin across the blogs and I'm anxious to try them out for myself. Just one quick question - do you use pumpkin pie filling or just regular pumpkin?

      I'm always running around like a mad woman. I actually have the luxury of going home during lunch - and even though I squeeze in one household chore while I'm there, I read while eating lunch. Just to leave the work world for a bit. And tomorrow - I have a half day and for some reason my better half decided to make us appointments for manis/pedis. Not only will it be relaxing - but hilarious to see him getting a pedicure. Pics to come. haha.

      I try to take some time to relax every weekend, but I always feel like I am stressing in my mind the entire time and feel guilty I'm not being productive. The cookies look great!

      Your oats looked so good this morning. I love that peanut butter too. It's my guilty pleasure. I don't know the last time I stopped running around and took time to relax. I feel like I'm always uptight.
