You guys are awesome! Thank you so much for all of the suggestions and ideas for both my butternut squash and some Thanksgiving desserts. Even though I didn’t make anything today, I do have a couple ideas in mind…
- For the butternut squash: Best Ever Butternut Squash Soup Ever
- For Thanksgiving dessert: A pumpkin roll recipe I found in my recipe binder (to bring to Jay’s aunt’s house) AND Kristen’s Caramel Apple Cheesecake to bring to my parents’ house (since they’re crazy and don’t like pumpkin).
Needless to say, I’ll be a bit busy in the kitchen tomorrow!

When it came time for lunch today, I was totally in the mood for eggs. I was pretty hungry by the time I got out to the kitchen though, so I wound up snacking on some sweet potato chips while everything cooked up. Gosh, I love these things.
As for the eggs, they turned our pretty stinkin’ good, too. And hey, here’s a crazy thought; do you guys ever eat scrambled eggs out of a bowl? It’s really an incredible idea…
Especially if you’re not ready to eat your eggs for at least 15 minutes. My goodness. Those guys stayed niiiiice and hot up in there.
But they were, eventually, delicious and made up of tons of onions, broccoli, tomatoes, spinach, and feta cheese. Oh, and ketchup. Duh.
Yummmm.
For dinner tonight, I had planned on making up some sort of chicken dish, but I completely lost all motivation. Poor Jay. Thank goodness he’s pretty self-sufficient and is able to figure something out for himself. As for me, I’ve got a few ideas in the running.
Tuna Salad…
Cereal…
Or diving head first into my bag of TJ’s goodies…
Okay, I’m kidding on that one.
