We Make A Pretty Mean Team

Well, besides our afternoon softball practice today, things have been pretty low-key around these parts.

Thankfully, it was another gorgeous day here today, so I was more than excited to lace up my snazzy red cleats and be out in the lovely sunshine.

I even got a little color on my arms for the first time. WAHOO! We’ve got our first game of the season tomorrow night, so I’m wicked psyched.

After practice, things got pretty boring. I roamed around the house a bit, cleaned a little in the kitchen, didn’t shower until almost 5:00, and then played a little fetch with Cody.

I think he was feeling a little neglected from us not being around much yesterday. Poor guy…he’s got it so tough, doesn’t he?

Eventually, Jay and I started to get some tummy grumbles, so we got to work in the kitchen. While we were working, we chatted away and ended up picking at the last few bites of my Creamy Fruit & Tortellini Salad, which was on its last leg.

I’ll tell ya…Jay and I can make a pretty mean team when we’re in the kitchen together!

Earlier today, I took a couple small pieces of Italian marinated chicken from our freezer to thaw. I also threw together some chopped up zucchini, yellow squash, red onion, and grape tomatoes and let them marinate for about 30 minutes in my favorite dressing (<— which is also one of my favorite posts).

Then I put everything on some skewers and cooked them on our Griddler Jr. until the chicken was cooked through.

While I worked on the skewers, Jay prepped some amazing roasted potatoes. I’m not exactly sure what he put on ‘em, but I know I saw some garlic, salt, pepper, and Italian seasoning in his arsenal.

It was a light, refreshing, and delicious Sunday dinner.

Now I’ve just got to figure out a way to get him to join me in the kitchen more often! Winking smile

I don’t know about you, but I’m about ready to curl back up on the couch and relax for the rest of the evening with my two boys.

    Congrats on the race that is something to truly be proud of. The best part of my weekend was taking a long nature walk because the weather was beautiful and I was with my loves (bf and dog).

    Great looking dinner! The best part of my weekend was my 10 mile run yesterday because I was finally healthy enough after a week of being sick to get it done! (Bonus points for feeling great the whole time!)

    The best part of my weekend was jogging a mile today because shin splints have put me out of running commission for the past four weeks! But today I was feeling good and I successfully covered a whole mile with no pain! I am ecstatic. I can't WAIT to start running again and I'm shooting for my first marathon this fall!!!! :]

    I would love to know how those potatoes were made-they look so delicious and I have some baby red potatoes in my pantry waiting to be cooked up! : ) My favorite part of the weekend was finishing a homework project this afternoon because I'm now finished with another semester of college-2 more to go!

    i had a fun weekend with my fam and friends, but THE best part of my weekend was my saturday morning with my mom because we went out shopping and had an awesome AND healthy breakfast! my favorite one that i've had in a long time--i'm already looking forward to our next meal there. now i'm sitting here on sunday night, wondering where the time went! :(

    Oh yea, Cody has it rough! Yea, I'd love it if my boyfriend would cook with me more often, since we always have so much fun when we do :D The best part of my weekend was not having any plans because it was nice to be spontaneous!

    The best part of my weekend was MY WORKOUT ON SATURDAY because IT WAS TOTALLY SPONTANEOUS AND IT KICKED OFF THE RETURN OF STRENGTH TRAINING IN MY LIFE!

    The best part of my weekend was going to a Fundraiser at our local ice cream shop and eating a big cup of soft serve with sprinkles and oreos because it supported a friend who passed away yesterday from cancer.

      Ahhh soft serve with sprinkles...now that sounds like a fabulous part to a weekend. I'm so sorry it had to be for that reason though.. so sorry to hear about your friend. :(
