Well, besides our afternoon softball practice today, things have been pretty low-key around these parts.
My two favorite guys right there…Dad & Jay.
Thankfully, it was another gorgeous day here today, so I was more than excited to lace up my snazzy red cleats and be out in the lovely sunshine.
I even got a little color on my arms for the first time. WAHOO! We’ve got our first game of the season tomorrow night, so I’m wicked psyched.

After practice, things got pretty boring. I roamed around the house a bit, cleaned a little in the kitchen, didn’t shower until almost 5:00, and then played a little fetch with Cody.
I think he was feeling a little neglected from us not being around much yesterday. Poor guy…he’s got it so tough, doesn’t he?
Eventually, Jay and I started to get some tummy grumbles, so we got to work in the kitchen. While we were working, we chatted away and ended up picking at the last few bites of my Creamy Fruit & Tortellini Salad, which was on its last leg.
I’ll tell ya…Jay and I can make a pretty mean team when we’re in the kitchen together!
Earlier today, I took a couple small pieces of Italian marinated chicken from our freezer to thaw. I also threw together some chopped up zucchini, yellow squash, red onion, and grape tomatoes and let them marinate for about 30 minutes in my favorite dressing (<— which is also one of my favorite posts).
Then I put everything on some skewers and cooked them on our Griddler Jr. until the chicken was cooked through.
While I worked on the skewers, Jay prepped some amazing roasted potatoes. I’m not exactly sure what he put on ‘em, but I know I saw some garlic, salt, pepper, and Italian seasoning in his arsenal.
It was a light, refreshing, and delicious Sunday dinner.
Now I’ve just got to figure out a way to get him to join me in the kitchen more often!
I don’t know about you, but I’m about ready to curl back up on the couch and relax for the rest of the evening with my two boys.
