Hey guys, happy weekend to you! I hope you’ve all been enjoying yourselves – I know we have been, and we had an absolutely beautiful weather day over here yesterday (if you follow me on Instagram, then you may have caught a couple of my “stories!”).
But for now, let’s talk meals! We ended up getting takeout twice, which we usually try to keep to 1x/week, but hey, it happens. We also had some delicious meals, both old favorites and some new ones!
Sunday: Slow cooker pot roast with potatoes, carrots, and onions w/ Italian bread on the side.
The recipe that we used for this was SO EASY and this was honestly an incredibly awesome meal. I will 100% use this recipe again!! This was also a super filling meal, too, and a great inclusion in our 30 Day Protein Challenge. Have any of you guys joined in on the challenge yet?? It’s been quite eye opening to see the impact that adding more protein has had on our day to day!
Monday: Leftovers of choice – I had some leftover Beef & Beans Chili with bread on the side
I’ve heard from a couple of you who have tried the recipe and love it just as much as we do – YAY!
Tuesday: Apple ‘n’ Bacon Mac & Cheese
It had been quite a while since we last made that dish and, oh myyyyyy, I forgot just how GOOD it is.
Wednesday: Chicken and veggies with Bisquick topping
This is a meal that my mom used to make ALL the time when we were younger. If you’re against canned, condensed soups, then this probably isn’t for you – but over here, we’re okay with including them every now and then because they’re just too convenient!
In full disclosure, Jay 100% prepared this meal while I was out getting Lucas’s hair cut, so major props to him!
For this we used a can of cream of condensed chicken, about 1 large chicken breast cooked and shredded, and a little garlic, salt, and pepper. Mix in about half a bag of frozen mixed veggies (cooked separately) and pour it into a 9×9 square pan. Then mix up some Bisquick with milk and pour over the top of the chicken mixture. Bake at 450 degrees for about 20-25 minutes or until golden brown. Super easy!!
Thursday: We ordered takeout from a local restaurant that does a “family style meal deal” – we got chicken parmesan with ziti, salad, and Italian bread to feed 4 people for only $22! (for the locals, it came from Paolo Lombardi’s!)
Friday: A random mix of leftover mac and cheese and some shredded chicken mixed with avocado, dried cranberries and mayo. Like I said, totally random.
Saturday: A super lame Chicken Fajita Rollup from Applebee’s. I’m pretty sure there was maybe like, 4 pieces of chicken in it…booooo.
But, on the bright side, we used a gift card and ordered curb side to go, so it was free.

I know this isn’t a fashion, food or fitness related request, but I would love to hear about the process of having your home built and what it entailed. My bf and I are looking at homes and wondered what the whole process is like when you start from scratch. I’d love to hear from you because I feel like you always keep it real with us and break things down!

I just got back from a trip back home to Chicago, and grocery shopping NEEDS to happen today since my husband lived off of scrambled eggs and toast for dinner while I was gone :)

Gosh I love food. Since it started getting cool here in DC, my desire to cook has been in full swing, so I made a roast with potatoes last week that we’ve been enjoying! I’m also DYING to make a gumbo. I’m from New Orleans originally, and this is DEFINITELY gumbo weather. ;)
