I’m going to be totally honest with you all…I’m kinda shocked that I’m still going strong with these weekly meal plans.
Given my track record, I’ve never been super great at sticking with the meal planning thing; it’s typically come and gone in waves. But I’ll tell ya, things are really going well the past few weeks, and it’s pretty surprising just how much easier it makes our weeks! Less stress, less running around, easier/quicker grocery shopping…dare I say, I think I’m becoming a new woman?!
But anywho…here’s a look at what we had last week. Maybe you’ll find some inspiration for the week ahead!
Sunday: We snacked on some Superbowl appetizers but, honestly, I can’t even remember what they all were at this point.
Monday: Crispy Brown Butter Gnocchi w/ Meyer Lemon and Brussels Sprouts
This was our final Blue Apron meal from last week (recipe HERE) and it was so good. Definitely one I’d attempt to create on my own!
Tuesday: Crockpot Shredded Beef Enchiladas with brussels sprouts
The enchiladas were good, and super convenient to be able to pull from the freezer (took them out to thaw 24 hours ahead) but we definitely agreed that they tasted better when we made them fresh the first time.
Wednesday: Leftover Italian Style Tomato and Meatball Soup with a fresh loaf of Cheesy Italian Quick Bread
That soup + bread combo is a HUGE winner in our house!
Thursday: Grilled chicken and avocado salads with more Cheesy Italian Quick Bread
We actually waited to eat that meal until Lucas was in bed so it was enjoyed back at our old favorite spot…the coffee table.
Friday: Takeout from DeFazio’s! We ordered a big house salad and their Chicken and Red Roasted Peppers Pizza with some added sautéed spinach. Oh. My. God. so good.
(and that’s definitely a scene that’s taken place in our house before!)
Saturday: We were *this close* to getting lazy and ordering more takeout, but we decided to use some of what we had and ended up making out awesome with some side salads and a batch of Chicken, Sweet Potato, and Spinach Quesadillas.
I almost forgot about just how good those things are!

Your meal planning is so inspiring! I used to love doing that but now I’m waitressing at a French restaurant and they give me lovely French food for free, which I’m not going to say no to as a student! I definitely love planning out meals though :) those crispy gnocchi look absolutely amazing!
When is Italian food ever not good? :)

This all looks so good! This week I’m making paleo lasagne, non-paleo risotto, gluten free pizza and shepherd’s pie – all about the treat foods now I’m finished my Whole 30!

Meal planning makes such a difference during the week! Meals come together so much faster. I am always glad when I take some time to set it up even if it’s just for dinners.

I’m like you. I find that when I have a plan it’s easier and more motivating to get dinner on the table. If I’m trying to decide what to make it just seems like a much bigger task.

Yummy eats! I actually had that gnocchi dish in a previous Blue Apron order and LOVED it – the toasted gnocchi really made the meal! That gnocchi looks so delicious! I’m with you that enchiladas taste better when they are fresh. I made a bunch when I was pregnant to eat after the baby was born and they came out a bit soggy when we heated them up. Still yum though!
