WIAW: Long Time No See!

I think it’s been quite some time since I last did a WIAW post, hasn’t it?

For those of you who may not be familiar, WIAW is…What I Ate Wednesday! However, I have no idea when this day of eats was that I documented. I’m pretty sure I meant to share this last week but then I forgot. #storyofmyliferightnow

These days, there really is no “typical” day of eats for me. Some days, I do pretty good on balancing out my meals and getting in my veggies. Then there are other days (like this past Sunday) when I literally only ate donuts, a leftover sub, cereal, and ice cream throughout the whole day. Needless to say, I went to bed not exactly feeling my best that day!

But it happens. I don’t have the time these days to put a ton of thought into my meals like I once used to. And honestly, I don’t really have the desire to either. What’s important to me is that I work on hitting all of the food groups (and not only hitting the carbs group like Sunday…) and am eating things that are both enjoyable and give me the energy to power through the day.

So that said…here’s a recent day of eats from a day I was working from home. It felt so strange trying to remember to document everything I ate, seeing as it used to basically be second nature to me!

Breakfast

Oatmeal with blueberries and peanut butter + a DD iced coffee (2 pumps caramel swirl and skim milk)

Oatmeal will definitely start making more of an appearance now that the weather is cooling down a bit (or so they say?!). I like making a batch of Creamy Crockpot Steel Cut Oatmeal and dividing it up for the week (I get 4 servings out of a batch!).

Mid-Morning Snack

A leftover pancake heated up and topped with Justin’s vanilla almond butter (my faaaaaavorite)

Lunch

Turkey & provolone wraps with mayo + some avocado and two clementines

I’ve been doing a LOT of deli meat + cheese wraps lately. And I always slather them all up in mayo because it’s just my jam.

Mid-Afternoon Snacks

Vanilla yogurt with some granola

And a couple of blueberry munchkins because…I’m a tad addicted.

Dinner

Crockpot Cheesy Chicken Enchilada Rice Bowls (are you sick of seeing this meal around here yet?) Winking smile

It’s just so easy to put together, you can’t beat it for weeknights!

Dessert

A Kodiak Cakes Double Dark Chocolate Minute Muffin topped with a scoop of vanilla ice cream and caramel

And this. was. divine.

I don’t totally love the muffin on its own, but when it’s topped with a little something creamy (like ice cream!) then it’s out of this world. I also bought the blueberry muffin but haven’t tried it yet.

    I am in LOVE with the Kodiak cake minute muffin(they also have pancakes ones). They are so good and are my go-to for breakfast sometimes when in a hurry. I LOVE peanut butter and oatmeal but have never had them together...it looks so good..might have to try that combo soon. thanks for sharing!!!!

      where do you get these Kodiak cake minute muffins? Store and section of the store they are in. I am a local.

        I found them at Market32 near HVCC, in the aisle with cake mixes!

    Yum!! I'll take your day of eats anytime! That dinner is my jam! Oh, if you ever have a spare 4 min, make a batch of homemade mayo. It's so incredibly delicious!! I've been adding it to everything lately. It's especially good with bacon on a blt plus Texas Pete. 1 c. Avocado oil (chosen foods brand is good) 2 tsp lemon juice 1 tsp coconut vinegar Dash salt and pepper 1/2 tsp each onion powder and mustard powder. 1 large egg Add all ingredients to a large glass measuring cup. Insert immersion blender. Start out on low, slowly moving the blender up and down until emulsified. Increase speed to high and blend until thick. Should take a min. Voila! Mayo! Store in fridge up to 3 weeks if it lasts that long. ? ❤❤

    I somehow squeezed in a little meal prep for myself this week and made PaleOMG's Pizza Spaghetti Pie. I use a whole onion and add a package of mushrooms when I cook the sausage and it's soooooo good. And it reheats amazingly!
