I know that this month’s theme for What I Ate Wednesday is supposed to be about “going green” with your foods, but I’ve got to admit…
Green or not, everything was still quite yummy, so let’s take a look!
8:00am – Breakfast
Pumpkin oats with blueberries and honey cinnamon PB + coffee. Man, those were some tasty oats.
11:00am – Mid-Morning Snack
I was too hungry to grab the camera, but another one of these tasty muffins was enjoyed right before my workout.
I still have a few of those bad boys left – I’ve been tackling them all by myself.
1:30pm – Lunch
I brought back an old favorite today – sweet tuna salad!
Today’s sweet tuna salad was slightly different from my usual, but I think I liked it even better than the old version. Check it out…
- 1 can tuna in water, drained
- 3-4 tbsp sweet relish
- 2 tbsp plain Greek yogurt
- 1 tbsp honey mustard
- onion
- baby carrots
- cucumbers
- celery
- corn
- dried cranberries
- salt & pepper
I served it on top of a bed of lettuce along with this snazzy new snack…
I happened to come across these Popped Crisps at Price Chopper yesterday (they’re on sale, 2/$5.00 with a $1.00 off coupon!) and they are REALLY good. They remind me a lot of pop chips, actually, if you’ve ever had them before.
They also turned out to be great scoopers for tuna salad, too.
Now, here’s where things get a little “snacky.” I had a completely booked shift at work last night from 3-8, so I had no idea when I’d get an opportunity to eat. Luckily, I managed to space things out fairly well.
2:45pm – Snack #1
While I was putting together a few things to bring to work with me, I ended up snacking on a small handful of almonds plus this cara cara orange. Seriously, these oranges are the bomb.
Yes, I said the bomb.
6:45pm – Snack #2/Dinner
I figured tonight would end up being a smoothie night, so I packed up a few things to make one when/if I had the chance: a scoop of vanilla SunWarrior, an apple cinnamon Chobani, a banana, and 2 teaspoons of chia seeds.
Thankfully, I had a few minutes to put everything together, and in addition to the ingredients above, I also added a splash of apple juice and about 3 teaspoons of granola.
All I’ll say is…Apple Pie through a straw. Oh yes.
8:30pm – Snack #3
This right here is what I like to call Peanut Butter Heaven…
I made myself a small bowl of peanut butter Cheerios with almond milk and then topped it off with a serving of Honey Cinnamon Peanut Butter.
This was my first attempt, or even craving, to add peanut butter to cereal. I’ll admit that it sounded totally weird at first, but I will tell you that this was soooo good. Like, there aren’t even enough words sorta good.
So there ya have it! That’s What I Ate Wednesday Tuesday.

I am the same way! I swear I eat veggies, but it seems like on days I document for WIAW the green tends to not be included! Hmm, I am usually not too out of the box when it comes to flavor combos, but last night I dipped roasted kale and roasted carrot sticks into buffalo sauce and it was pretty good!

Your sweet tuna salad sounds delicious! I’m going to have to try it! :) I’ve been loving tuna salad lately. It makes for a great option to bring to work for lunch. Although, I’m sure my co-workers aren’t too fond of the smell. Haha.

I blended together an apple with egg whites to make Tina’s 3 ingredient Apple Cinnamon Pancakes which I thought would be a little strange together but it turned out to be a total hit! It looked like a complete mess… But that’s a different story! Tasted amazing!

That sweet tuna salad sounds great. When I was little, my mom would make me chicken salad with grapes and pickle relish. So yummy!

I don’t know how weird it is but adding taco powder to scrambled eggs yesterday was a first for me…yeaaah it’s definitely my favourite way to eat eggs now!

Not too weird, but I usually use hummus on my salad as “dressing” but tried a mix of plain Greek yogurt, honey and lemon zest the other day and it was awesome!
On another note, love PB Cheerios! It was my evening snack last night too but sadly I finished the box and we do not have them in Canada yet :( Soon I am hoping!

I’ve always been a bit picky so I’ve never been too adventurous with weird food combinations, but I will say that salsa and Greek yogurt on a tortilla wrap is gross. Somehow, whenever my fridge was bare when I lived in a dorm, that’s usually what I had left in it. I was forced to have it for dinner once and it was gross!

I had half of a baked sweet potato with two runny eggs on top this morning … it was delightful! I think some people might think this is a weird combination – but I loved it. And there was total yolk porn (don’t even pretend you don’t love the look of a runny egg!) involved too ;)

ummm so I usually try to have a piece of fruit with my lunches and I’ve been experimenting with putting them in my salads. I’ve mixed either an orange or even a grapefruit in my usual lunchtime salad paired with turkey or chicken, some almonds, various veggies and some sweet balsalmic dressing and it’s really good! It doesn’t look too appetizing but it usually adds a little sweetness to the tart of the dressing. I always sneak a little “sweet” to every meal lol

Haha, I’m down with anything with peanut butter (sweet potatoes, yogurt, apples, pears, bananas… basically any fruit).
I have some cousins who eat potato chips (plain/original) with KETCHUP. I can see why that works… it’s like eating French fries and ketchup. It’s just funny because they use a butt-ton of ketchup.

I melt PB into cereal and yogurt ALL the time! I’m not a huge fan of PB2, but I like the consistency. Usually I melt it in the microwave and then pour either cereal/almond breeze OR yogurt over top and mix it all up. Yum Yum Yum!

I’ve been mixing up different kinds of veggies with whole wheat pasta, chicken or lowfat sausage, and random sauces (marinara, light cheese, sweet/sour, etc.). It usually turns out pretty well as long as I use my “food sense!”

I put peanut butter on everything. I usually put cocoa powder in my yogurt so it tastes like chocolate pudding. BTW first time here and love it.
