So what has quarantine eating looked like for you guys? More or less snacking? More time to plan out and cook more elaborate meals? Ordering takeout half the week? I truly believe there’s no right or wrong way to answer that question, and today I’ll share a little more about what mine looks like!
Last week, I shared a “What I Ate in a Day” post, with a focus on macros. While of the goal of that post was more to show how I eat to hit my macros while I’m counting them, today’s post has nothing to do with them.
I’d say that today’s post is a pretty good representation on how the majority of my days have looked like over the past 5-1/2 weeks. While I’ve been making an effort to ensure I’m getting some veggies + proteins in most of my meals, I’m also snacking a bunch and consuming a lot of sugar.
And if we’re being honest, I’ve also been consuming a good amount of alcohol, too. Although, go figure, this particular day happened to be one of probably 5 over the past 5-1/2 weeks where I actually haven’t enjoyed a drink or two. Hey, when in quarantine…!
SO…here’s a look at what my Monday looked like, in case you’re curious. : )
7:45am – Morning Coffee
I so, so, sooooo look forward to that first mug of coffee in the morning. Nothin’ like that first sip!
I tend to sit down at my desk and enjoy my coffee while checking in for our morning huddle and going through emails, etc. And just in case you wanted a picture of what that looks like, I found this one on my phone from Monday morning, taken by Alex. Pretty sure I was trying to listen in on my meeting while asking him to give me my phone back.
10:30am – Breakfast
Some mornings I’m ready to eat right away. Some mornings, I get so caught up with work and schoolwork with the boys that I don’t even realize what time it is! But lately, I’ve been having breakfast right around 10am-ish.
This is actually an older photo that I had to recycle, since I forgot to snap a picture of yesterday’s breakfast, but it looked exactly the same. Jay made us some egg sandwiches on English muffin, mine topped with some shredded cheddar + turkey sausage.
Somewhere between 11-11:30am – Snacks
Our sweet neighbor across the street dropped off some cornbread on our front porch Sunday evening, and well, you guys know I’m a sucker for good cornbread. I wound up having a couple slivers which amounted to a full piece by the time I was done.
Shortly after that, I was making the boys some peanut butter sandwiches for lunch and also wound up snacking on a few crusts. The top crust is always my favorite, in case you wanted to know.
1:30pm – Lunch
Eventually I realized I was hungry for an actual lunch, so I made a big salad with whatever veggies we had in the fridge, then topped it with some deli turkey since it was the only good protein option I had readily available. I also LOVE this ranch dressing from Bolthouse Farms and use it quite often on my salads!
More Afternoon Snacks
Shortly after lunch I found myself mindlessly standing in the pantry looking for something a little sweet. The winner ended up being about half of this box of yogurt raisins.
A little while later, I suddenly found myself back in front of that cornbread. Another piece down the hatch, along with a little butter for good measure.
6:30pm – Dinner
This dinner truly hit the spot! Jay marinated and grilled up some chicken breasts, and my goodness, they tasted SO delicious. On the side we had a package of butter noodles/rice and some frozen green beans.
After Dinner Sweets
Shortly after dinner, the boys wanted their treat and each decided on a little piece of the dessert I made over the weekend. Of course, I can’t open that thing and not grab a sliver for myself. So I did.
And then, once the boys were in bed, I scooped myself a dish of my favorite cookie dough ice cream from Stewart’s and settled in on the couch for some Netflix.
So there you have it. A legit, random day of quarantine eats. Every day looks different, as I’m sure if does for many of you, too, but I thought it would be fun to share.

This looks so similar to how our days are going! I try to at least eat a healthy lunch and dinner, but have been gravitating much more toward warm carbs for breakfast (pancakes, oatmeal, muffins, scones!) and all the carbs/sweets as snacks throughout the day. Just leaning into and the weird season we are in right now! But truly nothing beats that first cup of coffee in the morning. I love your blog, and love these posts! Happy weekend!
