Hey everyone! Thanks a bunch to those of you who helped me feel a little less ridiculous about being sad over my bittersweet goodbye yesterday. I’m glad to know I’m not the only one who can get attached to a motor vehicle.

Well, last night’s dinner was awesome. We had a great time with Joe & Kate and ate some great food.
The Pulled BBQ Chicken turned out perfectly, and we still have tons of leftovers (WOOO!). I passed on eating my pulled chicken as a sandwich…
so I could double up with two homemade corn muffins topped with a little butter. I don’t know what it is about cornbread/muffins, but I’m just in love with them.
I also cooked up some corn on the cob which was pretty decent, once again, for it being early in the season.
I always think it’s so fun to see how other people eat their corn on the cob. It seems like there’s so many different ways that people go about it! I eat my corn in straight rows, 4-5 rows of kernels at a time.
How do you eat YOUR ear…of corn on the cob?

My morning has been a bit thrown off due to the fact that Jay is still sleeping, thanks to a massive headache he’s trying to get rid of. Since I had plans to get up and hit the treadmill for some HIIT (and we all remember my dilemma with the early morning treadmill usage), I decided to hold off and let him sleep.
So while I’m waiting, I figured I’d make some breakfast.
With a side of fetch and iced coffee, of course.
Would you believe that I cut up this honeydew melon yesterday, and it’s already starting to get that tangy, almost going bad taste? I hate when that happens…but luckily, it was still alright this morning. Now I just need to figure out what to do with the rest of it before it goes bad???
Today’s English Muffin was the bomb. Yep, the bomb.
Not only because it was topped with half peanut butter, half low fat pb spread, banana slices, and chia seeds…oh no.
It was the bomb because do you SEE what’s baked right into my muffin?
Raisins!
I picked up a package of these Thomas’ Cinnamon Raisin English Muffins yesterday on sale at the grocery store, and had been waiting to dig in ever since. The muffins are soft and chewy, and the plump raisins baked right inside totally rocked my socks.
Delicious I tell you…simply delicious.

I eat the corn about 3 rows at a time straight across (for 21 years)…. Except I can’t eat it off the cob anymore. I had my front teeth reconstructed so I can’t bite down of things like that. :(

I eat my corn on the cob the same way. Weekend plans involve a bachelorette party Sat for which I need to make cupcakes and a bbq on Sun where I’ll be bringing an edamame bean salad. Not sure where we’re watching the fireworks yet.

I eat my ears like you do, but my mom eats hers in a circle. So weird!
I don’t know about the 4th, but I do know that if you freeze that melon and then puree it in your blender and add vodka, it will be hellagood. Yep, I went there.

I eat one row across, then I work from left to right and eat around the cob from my starter row. I know it’s complex ;) For the 4th I am going to Riverfest right here in La Crosse, can’t wait for fireworks!!

Well here in Canada, July 1st is the big day… Canada Day!
If I could afford it I would do Canada Day Friday, enjoy the weekend, then make an EXTRA long weekend by heading state-side for the Fourth of July! That would be quite the fabulous weekend!

I *have* to cut mine off the cob! I have some monster bunny teeth, and eating corn on the cob is too much of a hassle & embarassment for me! :)
I also get really annoyed with how quickly some fruit/vegetables go bad sometimes! I will be curious to see what you end up doing with the melon! Might be good with some yogurt as a snack!

I’m actually going to a wedding this weekend (the 2nd) at Lake George and I’m hoping that there are fireworks because that would just rock! I eat mine in circles around the cob from left to right, if that even makes sense. My husband refuses to eat it off the cob b/c he hates how it sticks in his teeth so he cuts it off.

Fun fact: If I have access to pulled BBQ (chicken OR pork) and a corn muffin or two, I make tiny mini sammies out of the pulled BBQ and corn muffin pieces. Itty bitty perfect sliders that remind me that every little thing in the world is going to be okay.
I can’t WAIT for the fourth! It’s so soon, and it’s SO my favorite holiday, and I’m SO going to the beach all weekend with my whole family (minus my little brother, who’s in France being the least patriotic of all).

My husband and I are going to Chicago for the 4th of July weekend! :) I’m super excited because I’ve never been there before. And they do the “Taste of Chicago” around the 4th… where they have a ton of the restaurants all lined up and you can try all the different foods. Yum! ;)
And regarding the corn, I usually take mine off with a knife and eat it with a fork. Less messy (although I guess less fun, too!). :)

I am going to Chicago for the Taste for the 4th with the boy and a few friends…possibly even the North Avenue Beach! The real fun will be the weekend after the 4th…that Thursday we are leaving for a lakehouse trip to Lake Superior! I have never been up there!

Omg are those English muffins not the BEST thing ever?! I blogged about how they are one of my “staples”! When I’m teaching during the school year I literally eat one every single morning because they’re easy to grab & go! YUM, maybe I’ll enjoy one for lunch! :-)

Throw the rest of your melon chunks in the freezer for a few hours, then put them in the blender with soda water, lime juice and some flavored vodka. YUM!

if you puree it in your food processor, you can put it in a baking pan in the freezer and granita-ize it.

This post about corn on the cob cracks me up. Just last night we had corn on the cob and my husband was amazed with the precision of how I got most of the kernals off the cob, while his is a jumbled mess. I was gonna take pictures but was afraid I’d gross everyone out by posting them. I’m glad you did the work for me! :)

You could always puree the melon and freeze it in ice cube trays. Then you have a fun, flavorful way to chill all your summer beverages!

I can’t believe the 4th is this weekend either! The worst part is, dare I even say it, that the summer always seems to just reeeally fly by after the 4th….I’m going home this weekend to visit all of my family. I just got engaged on Monday and my fiance and I can’t wait to see everyone! It’s definitely going to be an extra special time : )
