Ohhhh, Monday. Why do you creep up on us so soon??
We had such a nice weekend over here, I hope all of you had the same! I don’t have a ton to share, now that I look back on whatever pictures I took, but overall, it was just a really nice couple of days.
Our Saturday started out with soccer for Lucas, and the rest of the day (minus a quick trip to the grocery store for me and the little man) was spent at home. I got in a great workout, did a little cleaning, took care of some food prep, and spent the rest of my time playing with the boys.
We were having a little fun at dinner time with bubbles, in case you couldn’t tell.
We got lazy when it came time to decide on dinner and we treated ourselves to some Chipotle takeout. Chicken burrito bowl with some chips and all. the guac. for me.
It had been a while…almost forgot how much I loved those things!
And for dessert, Jay and I split a jumbo red velvet cupcake that I picked up off the “oops we made too much” cart at the grocery store.
I will gladly take advantage of that cart anytime I see something good on there.
On Sunday, we all enjoyed sleeping in until almost 8am, fed Lucas some breakfast, and then headed out to drop him off at my parents’ house for a few hours so Jay and I could enjoy a mini “day date.” We started things off by going out for breakfast which is, honestly, one of my all-time favorite things to do. I wish we could do it more often!
We went to The Eatery at Carol’s Place which, as you’ve seen here before, is absolutely a favorite of ours. I ordered an (enormous) omelet with broccoli, spinach, tomatoes, onions, and provolone cheese with toast and home fries. Ohhhhh, was it good…definitely a good way to start the day, if you ask me.
After breakfast, we went to the movies (first time since June!) to see a matinee showing of American Sniper.
Whew…what a movie. I told Jay once it was over that I don’t think I’ve felt that sort of gut-wrenching suspense from a movie in a long, long time. I can definitely see why it’s performing so well…Bradley Cooper was fantastic.
Never too old for a little movie theater selfie.
After the movie, we picked up Lucas and headed back home, and I did a little more prepping of food and salads for during the week
I also baked some oatmeal chocolate chip Heath bar cookies; they were from a bag and I just added the Heath bits so I can’t take credit. BUT, they were pretty delicious.
And then, the final highlight of our weekend is that, somehow, we managed to ditch the bedtime bottle(!!!!!).
Lucas just showed no interest on Saturday, so we decided to just go without it on Sunday and see how it went. Thankfully, he didn’t even miss it! Apparently, he was just ready to wean himself of it 18 months, who knew? Jay and I joke about that stinkin’ paci he still takes at bedtime but, honestly, I don’t think any of us are ready to give that up just yet.
So there are some highlights from our weekend! How about all of you guys? Did you have anything fun happening??

That omelet looks epic!!! I know what I ‘m making for lunch now!
Sara @ Lake Shore Runner says
All your food from the weekend looks excellent!! I really want to see American Sniper. It isn’t the type of movie I would normally go see (I am more into comedies and chick flicks) but I have heard such good things about it I feel like I need to see it.
Happy Monday!
Linz @ Itz Linz says
i took william to a music class and he had a play date – and i even got to go out myself one night! my parents watched him while i went to my staff holiday party – so fun!!
Leighann says
Have you tried the mason jar salads for your lunches? They work great and veggies are still nice and crisp after 5-7 days! A lot of people put their dressing on the bottom, but I prefer to take mine separately. Love them!
chelsey @ clean eating chelsey says
Oh my goodness, I forgot Lucas still took a nighttime bottle – woohooo for getting rid of it! We’re on the same page as far as the pacifier goes. Emerson can’t even go to sleep without BOTH of her monkeys. Gaah. We created a monster.
Stacie @ SimplySouthernStacie says
I went and saw The Imitation Game this weekend, so American Sniper is on my lift for next weekend. I’ve heard nothing but good reviews for it!
Brynn says
All the guac!! Haha! We had visitors all weekend, it was a blast but busy!
Brittany @ Delights and Delectables says
I’m dying to see that movie!
How exciting he gave up the bottle! I am trying to find a way to get Baby D to drink out of a sippy instead of chucking it across the room!
Bri says
Bye bye bottles!! I remember what a relief that was for us. And it was surprisingly easier than I thought. Now the paci is a whoooole different story. I swear E is more attached to it now than he ever was before. I blame the teething and lingering cold. Keep us updated on how Lucas is doing. I love the idea of “sending” them away and getting something cool in return. We will see! I feel like 2 is the cutoff ;)
Marielle says
Good job Lucas, that’s exciting! We saw American Sniper and Wild last week….both were really great! Have a happy Monday!
Renee @ Fit For Motherhood says
I love day dates with my hubby. We will definitely have to see that movie, but probably not until it’s at Redbox. :)
Breakfast is our favorite meal too. Sometimes we eat it for breakfast, lunch and dinner.
I really have to get better at food prepping. I just have absolutely no time to even do that. Haha!!
Brie @ Lean, Clean, & Brie says
I have been dying to see American Sniper!! It is not the usual type of movie I’d be interested in, but for some reason, there is something pulling me into watch it!
Liv @ Healthy Liv says
I had a chicken burrito bowl from Chipotle this weekend, too (and probably all the weekend before that.) It’s just SO good!
Christen says
Always a huge bummer when the weekend is over :( Looks like you had a great one!
Tamara @ A Side Of Dessert says
The food from your weekend looks delicious! It’s nice to spend some alone time with your husband as well. It looks like you two had fun! Enjoy your week!
Lauren @ The Bikini Experiment says
American Sniper is on my list of movies to see in the very near future! I have heard nothing but good things about it. Looks like a fun weekend! Have a great Monday.
Britt@MyOwnBalance says
I really want to see American Sniper!
Our weekend was so low key. We are moving so we’ve spent a lot of time packing and playing pass the baby so the other person can pack their stuff!
Ashley @ My Food N Fitness Diaries says
Go Lucas! It’s funny how we (or maybe it’s just me) get stressed about certain transitions, and then it’s surprisingly easy when it’s done on our kid’s own timing.
Ahhh I want to see American Sniper so bad! I’ve had lots of great things about it. Glad you guys got a date together!
haley @Cupcakes and Sunshine says
That Chipotle….
Autumn (@Beautifully Gray) says
Oh my gracious that red velvet cupcakes lots amazing!!!!
Lizzie @ The Magic Tree says
A “we made too much” bin?! You’re killing me. I’ve never seen that in my grocery but I’m going to ask the bakery next time I’m there haha.
purelytwins says
Yay for giving up the bottle!!
We have heard good things about American Sniper, maybe one day we will get to see it :)
Anon says
How do you get your cookies so perfectly shapes every time?
Melissa @ Freeing Imperfections says
Totally envious of the cupcake and cookies right now. My sweet tooth seems to only be increasing lately during pregnancy.
Jenny says
I would love to see that movie!! It doesn’t hurt that Bradley Cooper is in it. Hello hot stuff.
Koryn @ High Heels & Healthy Alternatives says
YAY, day dates are the absolute best! Glad you both had a great time! Hubby and I are looonngggg overdue for one, but to be fair, we did get to go out to a charity dinner with friends on Sat. night while my sis babysat, so that was fun! So nice to get all dolled up and put heels on for a change! :-) Love your meal prep by the way, especially the yummy salads! I so have to get better with prepping meals for the week – new year goals! Lol!
Ashley @ A Lady Goes West says
My husband really wants to see that movie, and we haven’t been to a move in a long time either. Might need to agree to go with him! :)
Jessica @ kiwiyogirunner.com says
That omelette looks amaaaazing! I might have to try and recreate it for brekkie now :) Lucas is so sweet!
I went to see taken three yesterday, but now I’m wondering if we should have seen American sniper instead!
Jenn@Mark My Miles! says
YAY Lucas! You are growing up to be a big boy!
Isn’t is funny how at this age, they are becoming more independent and will do things themselves? Our little man out of nowhere began using utensils like a pro and even wipes his mouth with a napkin? Who is this kid?!
Fiona @ Get Fit Fiona says
That red velvet cupcake looks delicious! I’m not sure I would want to share it though.
The highlight of my weekend was being able to get together with some friends I haven’t seen for awhile. It was great to reconnect!
Monica says
Oh, my goodness! I’m so jealous that Lucas weaned himself off the bottle! My 22 month old shows no interest in letting it go! I joke that she’s going to be in grade school and still having a bottle at bedtime and if she wakes up in the night!
A Heath bar sounds so good right now…
Heather @ Housewife Glamour says
American Sniper was SO GOOD! Bradley Cooper was great and whew what a story! I definitely cried. <3 Also, Chipotle + cupcakes. #nuffsaid
Maria@ChampionshipFit says
We saw American Sniper too…loved it! I agree that Bradley Cooper was phenomenal. Really a moving film.
Welp, now we’re trapped in the Jersey blizzard so I’m glad we got out over the weekend while we could!
Tiff says
I love going out for breakfast. I know I can make bacon and eggs at home, but it’s just not the same.
Way to go ditching the bottle! E is almost 16 months, but he’s still very into it. I hope he just gives up nice and easy one of these days. (Fingers crossed)
Danica @ It's Progression says
We saw American Sniper this weekend, too. I also read Chris Kyle’s book. Both my husband and I thought it was a fantastic movie – so well done. The theater was just silent at the end.
Kerry says
Oo I love going out for breakfast too! And we reaaaally want to see American Sniper.. even more so now ;)
Gail W says
Love all your posts Courtney! Your energy, organization and enthusiasm are always an inspiration. Love that you share your little man with us! Can’t believe he’s 18 months already. Seems like yesterday you were announcing your pregnancy. I remember the paci issue. Back when my oldest was about that age we were big Sesame Street fans so we said Oscar the Grouch took the paci. Luckily it worked. My 4 yr old granddaughter has managed to keep hers for bedtime. Much harder struggle now, but in the end every kid manages to grow and thrive no matter! You’re awesome!
Courtney says
Those are such nice things of you to say, Gail. Thank you!! (and love the idea of having Oscar take the paci – so cute!)
Carmela says
We didn’t stop the bedtime bottle til he was nearly 3 !!! he loved it as always been a sookie baby – was breastfed til 22 months.
His teeth are beautiful and have had no problems, he never went to bed with his bottle and drank it so fast that I dont think anything had time to stick to his teeth !!!! LOL
Wouldn’t worry about it – do what feels right.
Its far worse if you are giving juice in a bottle, milk is fine.
all juice etc should be in cup.
