Hey guys! Totally loved hearing all of your feedback on yesterday’s post, and thanks so much for weighing in. It was cool hearing how some of you have made some big career moves, too, so major props to all of you!
I’ve had some of you ask what it is that I do now, but really, there isn’t a whole lot to share (and I prefer to keep some things “off the blog,” if you will). I work for a software company, and my position has me as an integral role between some of our customers and our in-house developers.
Is it a job that’s changing lives? No, not really. Does it make me feel like I’m making a difference? Not most of the time. But what does make a difference? The fact that I totally love the people that I work with, I have an amazing boss, and I have the flexibility that is absolutely my top priority right now for me and our family. Should I still be at the same company a few years down the road, then maybe I’ll pursue some other avenues within the company. But for now, I’m doing what works best for our family, and it’s really great.
SO…all of that said…let’s switch gears a bit with a little WIAW action! I decided last minute that I was going to partake in Jenn’s party, so some of my photos are recycled, but you’ll get the idea.
Breakfast
Love Grown Foods Hot Oats (peach almond vanilla flavor) + my favorite Starbucks coffee order
It had been a while since I had the peach almond flavor, and it is soooo good.
Mid-Morning Snack
Banana + peanut butter, which was actually eaten closer to noon because I was pretty busy all morning.
I ate that in about 2 minutes or less so I could race out the door for an appointment, and by the time I got back, I was more than ready to dive into lunch.
Lunch
A salad, no surprise there…BUT, with a few new/different toppings.
This week, I decided to add some diced strawberries, roasted brussels sprouts, and grilled chicken, and they have been totally delicious the past two days.
Mid-Afternoon Snacks
About an hour after lunch, I still wanted something more, so I broke into the rest of the snacks that I grabbed from home and snacked on an orange, then some belVita breakfast biscuits.
I first blogged about those breakfast biscuits almost a year ago, and they’ve continued to be a favorite of mine ever since. SO good!
Pre-Dinner Snacks
While I was preparing last night’s dinner, I’m pretty sure I snacked on a few bites of Lucas’s pasta and grabbed a Dove milk chocolate caramel, but they went undocumented. I also poured myself a glass of chardonnay while cooking because, well, cooking + wine are always a wonderful combo.
Dinner
Oh, it was a good one! Seared flank steak with oven roasted red potatoes and some zoodles!
Yes, I finally got the chance to use my new spiralizer to make some zucchini noodles, and I was totally shocked at just how easy the thing was to use. Once I had my “zoodles,” I tossed them in a little olive oil, salt, pepper, and garlic powder in a sauté pan. I let them heat through a bit, then finished them off with some parmesan cheese.
Those things totally exceeded my expectations, and now I’m feeling like I want to spiralize all. the. things.
Dessert
I haven’t had anything yet, since my goal was to get my post typed up before 8pm (I’ve got 10 minutes to spare), but I’d be willing to bet money on the fact that I’m likely going to have this. It’s sort of been my thing recently…ya know, if I’m not eating ice cream or cookies, and all of that fun stuff…

I just got my spiralizer yesyrrdsy and can’t wait to give it a whirl (haha, I had to). Lately I’ve been loving grapefruit and eggs prepared any way.

I need to get myself a spiralizer! I feel like I’m totally missing out and it would be a great way too add some more nutrition to my meals! You’re meals all looked delicious, especially dinner ;). I’ve been enjoying paninis lately. Totally hooked!

Your zoodles even LOOK much better than I’d expect them too. They look soft and almost like real noodles. I’d never think to put strawberries in a salad with lots of veggies, but I’d bet it’s a pretty good sweet + savory combo!
And any kind of Dove candy is a win in my book!

I am so pumped because I finally have a spiralizer headed my way! I’ve wanted one for forever but never bit the buillet. It’s gonna go doooown. Best thing I ate yesterday was my dinner at Seasons 52 and the raspberry and chocolate chip brownie dessert. OMG

I feel like we can all agree that the spiralizer is the best thing since sliced bread! The best thing I ate yesterday was my dinner from the Whole Foods salad bar. Yum!

I lovvvee roasted brussels in salad! I’ll have to try them in combination with strawberries. I actually made a flatbread pizza last night with leftover roasted brussels, garlic, ricotta cheese, sautéed kale and a little parmesan. It came out more delicious than I had anticipated!

I had no intention of staying with my job for as long as I have. When I first started, I needed something to do until I finished my first novel, and it went crazy insane with success. I finished the novel, but it wasn’t that successful. In the last year or so, I’ve resigned myself that this company isn’t as terrible as I wanted to believe. It’s been especially great hearing from the CEO, herself, that they want me to move up higher in the company. So, all things work out how they’re supposed to. Will I be here forever? No idea. But for the time being, working up instead of staying stagnant is a fun adventure. :-)

I love putting strawberries in veggie salads! It adds the perfect hint of sweetness. I’ve been wanting to try out a spiralizer for a while, and if they’re actually fairly easy to use I might take the plunge… and by that I mean ask for one for my birthday ;)

Be careful! Once you enter into the world of spiralized things it is a slippery slope. You want to spiralize everything! But alas, not a bad problem to have, especially if it is vegetables.

Hi Courtney! Can you talk about some of the flexibility you have that makes it easier for your family? Do you flex your hours? Work from home? I am so with you – when I first got my spiraliser I found myself spiralising EVERYTHING possible – apples, zucchinis, potatoes, cucumbers, carrots, you name it!

So interesting to hear you talk about your job. I feel the EXACT same way about mine! I used to get bummed out that I wasn’t fulfilling my lifelong passion (um, not sure what that even is to be honest)…but now with a 14-month-old I’ve really adjusted my attitude about working. My job is really flexible, the pay is great, and the work is interesting to me (but probably not many others ha). I work so that I can do the things I want to do outside of work. This realization totally reframed my thinking about work, and ironically made me much happier in my job!
