So I almost didn’t post a meal plan post this week because ours was a bit…meh. We’re trying really hard to just eat through what we already have in our fridge/freezer, so there wasn’t much of anything fancy this past week. But hey, we can’t all eat like kings every week! And, besides, it’s kinda hard to do that when half of your kitchen is packed away in boxes…
I have no idea what the week to come will look like on the meal planning front (since I’m not really planning much of anything!), but here’s a look at what we threw together this past week.
Sunday: Cheeseburgers on the grill with potato salad and green beans
Monday: Turkey sandwiches with chips and…more green beans
I used a recycled photo because I was too lazy to grab the camera. Plus, these looked better than the ones we made this week.
Tuesday: Fish sticks with sweet potato fries and…more green beans
I bought the fish sticks a while back from Trader Joe’s thinking they’d be good for Lucas, but he’s not really a fan. So I’ll eat ‘em instead!
Wednesday: Leftover chili from the freezer with homemade cornbread
Thursday: BLT sandwiches with french fries

Friday: Mediterranean Arugula & Tomato wood fired pizza
And before you think I got all fancy and made it homemade…
I didn’t.
Saturday: Spaghetti and meatballs with a container of homemade sauce from our freezer

Ha! I find myself eating fish sticks and chicken nuggets too. I buy them for my toddler as well and he is not a fan. He dips them in ketchup but just licks the ketchup off of them, instead of eating the actual meat…ugh. Hope your packing is going well.

Hi Courtney – random question – I think you mentioned in a prior post that you had purchased the veggetti – what are your thoughts? I want to purchase a spiralizer, but don’t want to invest in a large one as I have enough kitchen gadgets – but curious as to quality of the veggetti. Thanks and good luck packing!

I think it’s great! For the amount of space it takes up (practically nothing) I’d say it was definitely worth the purchase. Only thing I’ve noticed is that it doesn’t do too well with larger sized things, so I need to try to find more narrow veggies to put through it.

Yum! Everything looks super tasty and yes, you had me fooled, that pizza seriously did look homemade! I am impressed, but then again, I’m a huge fan of Target’s store brand items, so I would think their pizza would look and taste great, as well.

How long do you freeze the sauce, do you store them in individual containers? Also, how are you defrosting it? I am trying to get a handle on Meal Planning and trying to freeze stuff but I just want to make sure I am doing it right! Thanks in advance!
