Since I started off your day with all sorts of pizza talk, let’s catch ya up to speed with the rest of the eats happening today…starting with breakfast.
I was actually having a big of a conundrum this morning…I had planned on having an egg, cheese, and jam sandwich on waffles, but when I opened my provolone cheese, I found…mold. Dun dun dun…
Chelsey told me that I’d probably be fine to pick around it (because, ya know, we email together at 7:30 in the morning), but by that point, I already had my brain refocused on waffles with PB & pumpkin…and banana slices, chia seeds, and a drizzle of maple syrup.
Shortly after breakfast digested, I squeezed in a quick workout. Today was a running day, and I managed to get in about 3.3 miles on the treadmill in just over 30 minutes. I was also able to do two- 10 minute interval runs, which felt amazing. I am so happy to have it back in my life…even if it is just for once or twice a week.
Once that was done, I wound up with a crazy grumbling tummy, so I snacked on half of an apple with some peanut butter to hold me off until lunch.
About an hour later, I wound up putting together this fun little snack plate.
Carrots and celery with roasted red pepper hummus
Two wasa crackers topped with a wedge of The Laughing Cow Light Swiss Cheese, and some raspberry jam (SUCH a good combo) and a very special granola bar…
Yesterday, I received a fun little package in the mail from my awesome girl, Chelsey, complete with a small batch of her delicious chewy pumpkin spice granola bars.
I swear…the day this girl and I get to meet will be just incredible. I love her to pieces. And the granola bars? Yeah…definitely make ‘em.
Lunch was on the light side, but that’s alright because it filled me up for the time being. I’m already planning a later afternoon snack…perhaps a piece of leftover pizza??

Hey Courtney. I am a big fan and by no means trying to attack you buy don’t you think you should address getting back to running in the blog after the whole HA thing? I’m sure it would be helpful to others, and not mention necessary to clear up the confusion rat other fans like myself must be feeling

Hey Monica, no worries. I actually mentioned something about the running last week, in regards to HA. I’m still keeping things very much to a minimum – 1-2x/week max – and doing the rest walking and yoga.
Looking back on that post though, I realize that I could probably be more clear, so I’ll work on putting that together soon this week.
Sorry for the confusion, but thanks for the heads up.

I hate it when planned meals are ruined because of spoiled food :? But Plan B looks pretty darned good anyways ;) And I may have missed it, but I don’t remember if you mentioned that your HA cleared up so that you could get back into running, or if you’re just easing back into it anyways?

I love laughing cow on almost anything. It makes it look and taste more ‘wicked’ which of course makes it even better!

I would not have thought to combine cheese and raspberry jam, but it sounds delightful! I am definitely going to be trying that here soon..possibly on a lightly salted brown rice cake!
