Well I’ll tell ya, we are coming off one great weekend over here! I still need to work on going through all of our pictures, so I’ll be back again tomorrow with a little recap of all that. But for now, I’ve got a fun post headed your way!
Once upon a time, I was pretty good about sharing our weekly meal plans with you all. And from the feedback I received from many of you, it was something you all looked forward to.
I agree, I also liked them because I feel like they kept me somewhat accountable, and also made me commit a little more to meal planning. But then we had a second kiddo…
And, well, that ship has sailed a bit. At least for now!
While I do still attempt to meal plan for our sanity/budget/etc., it’s a bit different. Some weeks, my meal plan will include things like “cereal” or leftovers, and some weeks they’ll include a delicious Blue Apron delivery. But I figured since it’s been a while since I’ve really shared any of our dinners, I’d give a little look at what you’ve missed!

I bought this back in July and, admittedly, I went through a brief phase where I wanted to use it ALL the time, but I haven’t touched it much in August at all. I think my problem was that I was finding and choosing recipes that had quite a few steps and (in my mind) were defeating the purpose of the “speediness” that drew me in.
Instant Pot Carnitas made as tacos and scooped with tortilla chips with home guacamole, onions, and sour cream.
THAT meal was a good one. And it was one that was definitely planned as being served with a side salad, but then the evening got crazy and well…no salads.
Sweet & Spicy Beef with Jasmine Rice and Crispy Shallot
UGH. This meal made me so happy. It was probably one of my favorite Blue Apron meals of all time. I don’t know what it was about it (yes I do…hello, crispy shallots) but we definitely saved the recipe card to recreate that one. That’s one of the things I love lately about the Blue Apron meals…they really do make it so easy to recreate them at home!
We took a few weeks off from the service in July since we were going to be away on vacation and whatnot, but this delivery came shortly after we got back and it was such a treat to come home to (another perk of Blue Apron…you can skip/cancel weeks at any time!). Especially when you haven’t been grocery shopping yet, ya know??
Homemade pizza!!
I seriously think that was one of THE best pizzas we’d ever made (I think it was from an issue of Cooking Light?). We cooked it in the oven (as opposed to the grill, our usual favorite) and it just had the best crust and was full of flavor.
Pan-Seared Steak & Oven Fries with Cherry Tomato & Corn Salad
That tomato and corn salad was LIFE. And it was SO simple (roast the veggies, a little sherry vinegar, olive oil, shallot, S&P). It reminded me, once again, that cooking fresh doesn’t have to mean elaborate. Summer produce is delicious enough on its own! And speaking of fresh, I love how Blue Apron is continuously working to use high quality ingredients in their deliveries.
Pulled pork quesadillas with sautéed red onion + side salads
This meal was from a while back (we actually used leftover pulled pork from Alex’s birthday party, so we’re talking probably 2 months ago…) and I think I’ve determined that I will now always be making quesadillas with our pulled pork/chicken leftovers. WOW, so good.
So good, in fact, that Alex refused to let me eat them by myself.
But this is actually no different from any other night around here #musthavewhatevermomhas
It’s a good thing he’s cute, because mama doesn’t always like to share her food. ; )
Chicken fajitas with jasmine rice and homemade guacamole
The fajitas were SUPER easy to do; I just cut up some peppers and onions, cut a few chicken breasts in strips, and added in about a pint of halved grape tomatoes. Tossed ‘em all in some olive oil and spices, and roasted at maybe 400 or so for…20-25ish minutes?? Quick, easy, delicious. And plenty of leftovers for lunches, too!
Crispy Chicken Tenders & Hot Honey with Potato Salad
Once again, Blue Apron nailed it on their sides here. The potato salad was my favorite part of this meal!
Smoky Caramelized Onion Burgers with noodles and green beans
These took a little extra effort with the onions (really, only a little) but SO worth it. These are definitely a must-make. Bookmark ‘em!
Sweet & Sour Pork Bowls with Sautéed Peppers & Miso-Roasted Eggplant
This Blue Apron meal was amazing. And I wished it was one of the family plan meals (as opposed to the 2-person) because both of the boys actually enjoyed it, too! They’ve always got such awesome, different recipes, which we likely wouldn’t try otherwise. Plus, they’re easy enough for Jay to cook, too.
But actually, that sounds like a knock on Jay, and let’s be 100% honest here. Jay is definitely the better cook out of the two of us. Without a doubt.
Miso Chicken Ramen with Tomatoes, Corn, & Kombu
That meal was insaaaanely good this past Friday, especially the chicken!

I have been saying forever that I need to try Blue Apron – and the meals you talked about here are convincing me even more! I love that it basically forces you to step outside of your comfort zone a little bit with cooking. I could be so content eating the same meals over and over again, but I really want to expand what I am making lately.
