Best of Intentions

Oh man, you guys. You know those times where you’re all set and ready to commit to something and then, BAM, life happens? Umm yeah, welcome to my life this week.

I had the best of intentions of putting together some new posts this week, getting in some great workouts, and catching up on some stuff at home that I’ve been trying to get to…buuuuut, it looks like this just isn’t the week for that. I haven’t posted since Monday, I’ve only worked out once since Saturday, and my to-do list at home has barely been touched. Ahh well…it happens, right?!

Despite my work week feeling like it’s dragging (I feel like it should have been Friday about 3 days ago), it’s actually been a pretty good one. Lucas has been an absolute blast, and we’ve even managed to have some good food (including Kristen’s Baked Pesto Chicken Parmesan with oven roasted potato wedges).


Tuesday night, however, was by far the highlight of my week. I picked up Lucas after work, hung out with him at home for a bit until Jay got home, and then it was mommy’s solo night out! I had a therapeutic massage scheduled for 7:45pm, so before I had to go there, I hit up a couple of my favorite grocery stores that I don’t usually get a chance to visit.

First up…The Fresh Market. I was pumped to see that their pre-packaged coffee is BOGO this week, so I picked up a couple bags of my always-favorite caramel macchiato flavor.


And thanks to my friend, Kanika, I also made sure to check out their chicken. Did you guys know that The Fresh Market sells their antibiotic free boneless chicken breasts for only $2.99/lb on Tuesdays? Talk about a great deal!


I obviously got a bit excited and stocked up. Winking smile

After my trip to The Fresh Market, I hit up good ol’ Trader Joe’s for some produce.

Oh yeah, and some treats too…


I’m tellin’ you guys. I cannot resist that cookie butter and those cinnamon schoolbook cookies. I actually love them more than the cat cookies…and that’s saying a lot.

I also picked up some powerberries because, well, why not.


And since I knew I’d be getting home late and wouldn’t feel like packing a lunch for the next day, I grabbed this salad. Hoooolyyyyy cowwwwww.


That thing was absolutely incredible. Seriously, TJ’s. You hit the nail on the head with this one!

So after all of my shopping was done, I headed to my massage which was a solid hour of pure bliss. For the past few months, I’ve been dealing with some serious tightness and just general discomfort in my entire neck/shoulder region so a therapeutic massage was juuuust what I needed. Within about 30 seconds, my masseuse confirmed the fact that my muscles are tighter than tight and she recommended I come in again soon.

Ohhhh, if only money grew on trees.

By the time I got home it was fairly close to my bedtime, so I chatted a bit with Jay as he filled me in on his night with the boy.


Apparently, he was good as gold (and is getting oh-so-close to that crawl he’s been working so hard at for the past couple of weeks!).

Speaking of the little man…he’s seven months old today. SEVEN months. How in the world is that possible??

Alright, gotta jet…I’ll catch up with you cool cats tomorrow! Well, at least that’s my intention. Winking smile

Funny Jello

Okay, so I have had the most random memory in my head all morning…

While I was getting ready for work earlier, I was watching the news and heard the story about how Annette Funicello has passed away. Of course, hearing any news that someone has died is always a sad thing, but even after the story was over, I could not get her name out of my head. And then I realized that everytime I was saying her name in my head, I was saying it as “Annette Funny-Jello;” and then it dawned on me…

I was remembering the episode of Full House (wayyy back in 1991) where she and Frankie Avalon were on!


Joey was getting the chance to be on a TV series with them and Michelle kept calling her Annette Funny Jello. Pleeeeeease tell me that someone else remembers this?! I know I’m not the only former Full House fan out there!

But anyways…I told you that was random, right? ;) Moving forward…

Let’s talk about last night’s dinner because ohhhhh was it awesome.


Check that out…I’m eating veggies. And lots of ‘em too! Admittedly, veggies haven’t been at the top of my list these days, but last night there was nothing that sounded better than a big, veggie-filled salad. By the time I got home from work, Jay was already home and chopping up some of the veggies which totally made the salad a gazillion times better. You guys know what I mean!


My salad was filled with lettuces, cucumber, tomatoes, carrots, red onion, red bell pepper, pickles, cheese, dried cranberries, leftover garlic chicken from Sunday, and a couple croutons. Jay also decided to throw a random tortilla strip on there, in case you happen to spot that. What a goober.

On the side, I heated up a couple pieces of TJ’s naan for the two of us, and topped them with some of this garlic cheese spread stuff that we have. It’s delicious.


A couple of hours later, the two of us were in the mood for a little something sweet, so we broke into our favorite after-dinner treat from the past two nights…

cookie butter and trefoils

Yes, that would be Trefoils girl scout cookies topped with TJ’s cookie butter. I opened this jar up over the weekend, and Jay has suddenly become obsessed. Not that I blame him…the stuff is UN-believable. We each enjoyed a few cookie butter topped cookies before tucking them back away in the pantry for the evening. It definitely would not be hard to go overboard on those!

The two of us spent the rest of the evening lounging and watching The Voice, and I must say that I am really loving Shakira and Usher on this season. The four judges feed off of each other so well and they are just downright funny if you ask me. We also had a few good laughs at Baby Tooth, who was very obviously making his presence known last night…we had a blast watching my belly move and seeing him kick and jump around in there. I swear, at one point he must have done a full flip…I think he liked the cookie butter too. ;)

I know I won’t even be able to get them all here, but immediate ones that come to mind: Boy Meets World, Family Matters, Saved By the Bell, 90210, Home Improvement, The Fresh Prince, The Wonder Years (mostly because everyone told me growing up I looked just like Winnie Cooper), Step By Step, Blossom.

Like, Today.

Two more days until Thanksgivinggggg…who else is as psyched as I am?!?! I’m supposed to bring something over to my parents’ house for dessert (no, I’m not hosting this year, and that’s a-okay with me!) but I can’t decide what to make. I’m really the only fan of pumpkin pie (crazy, I know, right?) so I’ve got to think of something else. Anyone have any ideas or tried and true favorites?

So yesterday was a really great day. Jay and I met up with my in-laws for dinner to celebrate my FIL’s birthday and I had the most amazing filet mignon. I also got a super fun package in the mail filled with all sorts of Trader Joe’s goodies.


The package came from my good friend, Shayla, who lives all the way on the opposite side of the country. Although Shayla and I have never met in person, we’ve been in touch for probably almost two years through blogging and really got closer this past year.


I could not BELIEVE this package when I opened it up…I mean, seriously. It’s filled with basically all of my favorite TJ’s goodies, including not one, but TWO jars of cookie butter.


Squeeeeel! Thank you so much, Shayla. You are the BEST!


Even though I really just wanted to dip my new cat cookies (they’re at the bottom of that bag!) into cookie butter for breakfast, I withheld on that. For now.


Instead, I had a whole wheat English muffin, half with PB&J, half with PB & banana, plus a clementine. Not cookie butter, but not too shabby.


I picked up a crate of these over the weekend since they were on sale for $3.99, and they’ve been really good so far. Minus the ones with the random seeds though…hate that.

So, another thing I picked up at the store about two weeks ago? This butternut squash.


Every time I go to make something with it, I wind up changing my mind. I really think I want to make a soup out of it, but I need a good recipe (preferably one that isn’t “curry” anything). Then again, I have seen some interesting pasta dishes with it too.

THE Thing To Do

Howdy howdy! Happy Thursday! How’s everyone’s day starting off so far?

So last night was a wonderful evening – I got away from the computer and out of the house for a bit. Jay and I had to make a trip to the mall, so we headed out after eating a quick dinner of random leftovers from the fridge.

Now, it’s not very often that I can get hubster to go to the mall. Unless there’s something he needs (hence, our trip yesterday) I’ve pretty much just stopped asking him to go. I’ve decided I’d rather go by myself than listen to him complain.

But while we were there last night, for some reason, it totally brought me back to when we were younger. As teenagers in high school, going to the mall was one of “the” things to do (aka, one of the only things to do), so that’s where we’d be…pretty much every weekend. Usually after a dinner at TGIFridays, Pizzeria Uno, or Applebees.

I love thinking back to those days…knowing just how long ago they were (over 10 years!!) and knowing that Jay was a part of them. Awwww, aren’t I just the little sapster this morning? Winking smile

So after we were done at the mall last night, I was able to convince Jay to stop for some fro yo at another new-to-us place called Lemondrop. I had a Groupon, so he really couldn’t say no. Honestly? I think this is now my favorite fro yo spot. It was just sooooo good.

Conveniently enough, Lemondrop is located right next door to one of our other newest locations…


So we walked on over since Jay still hadn’t had a chance to check it out. (P.S. – going at 9pm on a Wednesday night is PERFECT). We picked up a couple odds and ends, including THIS.


Ohhhh, I know I probably shouldn’t have. I’ve heard people rave about this stuff. I know it’s going to be dangerous…but…I can’t help it. I want to bake with it in a bad way. Winking smile


So let’s fast-forward to this morning. I was up nice and early to attempt to get a head start on my day. I started by typing up and emailing out some client training plans, but about 10 minutes in, the power went out. Basically, the worst thing that could happen to me today…because not only did I still have seven more training plans to email out, but I also still have to frost four dozen cupcakes.

Rather than freak out, I decided to take care of a few things that didn’t require electricity, and as I started to do that, I was getting huuuungry. I really wanted oatmeal today, but I had no idea when the power would be back on, so I settled for a no-heat-required sweet breakfast quesadilla.


It wasn’t exactly oatmeal, but it was better than I expected.


My coffee on the other hand? I thought it’d be okay since I managed to put the pot on before the power went out, but by the time I got to it…lukewarm.


Womp womp.

Of course, not five seconds after I came in to sit down to eat my breakfast…


The power came back! Thank goodness. The first thing I did was warm up that coffee. The second thing I did (am doing?) is type up this post.

The next thing I’m going to do? Get workin’ on those cupcakes!
