Sushi with Joe and Kate

Last night was juuuuuust what the doctor ordered. A delicious dinner out, spent with fantabulous friends…

We had been hoping to get together with Joe and Kate before we left for our trip to Mexico but it just never happened, so we made sure to get together with them last night. We just love these two to pieces. Smile

Our double date duo hit up Shanghai Grill, a new-to-me Chinese/Japanese/Thai/sushi restaurant. Let me tell YOU…I’m so bummed I never got to this place sooner. It was SO good!

The four of us decided to start with a bunch of appetizers, which included crab rangoons (umm, oh my god they are amazing?!), pork dumplings, and my favorite…edamame.

I was totally going back and forth on whether or not I wanted a main entrée or just sushi. While we were in Mexico, I actually tried pad thai for the first time in my life (is that crazy?!) and loooooved it so I almost got that.

But ultimately, sushi won me over. As always.

A sweet potato tempura and a California roll for the preggo lady, and man-oh-man did they hit the spot. So much so that I didn’t even miss the fact that my choices of sushi these days are incredibly limited.

While we were at dinner, I had to be sure to make the group aware that we were, in fact, just a few doors down from a TCBY…

And, of course, we visited there for dessert. Almost for forgot to take a photo, since the place was bombarded with middle-schoolers who appeared to have just gotten out of a concert of some sort, so as soon as we got our goods, we actually just ate them in the car. Hey, they tasted just as good in there as they would have inside. I’m no stranger to eating fro yo in my car. Winking smile


After letting myself sleep in a bit without an alarm this morning (which, surprisingly enough, got me up a little before 8am) I decided to make some breakfast for me and the hubs, who was working remotely from home. On the menu?

I just used some of this waffle mix to make some super quick, super delish waffles, which got topped with some syrup and banana slices.

Most of our morning/afternoon was spent both lounging and cleaning, and now we’re heading out for the rest of the day to run some errands, check out some stuff for Baby Tooth, and meet up with the Mexico crew tonight. Should be a fun one!

You Can Bet Your Bottom Dollar

Talk about a winning combo…a double date night with two of our best pals, leftover Easter candy (I picked through to get all of the skittles and M&M’s, along with a few Starbursts…I decided to pass on the alcohol chocolates),


and a little more of my own eye candy.

The four of us saw Fast Five, and we all agreed that it was a really good movie. We’ve all been fans of the previous ones (duh, if Paul’s in it, I’m a fan) but this one did not disappoint. I won’t give anything away, BUT, I don’t think we’ve seen the last of Paul & Vin together….


From the moment I woke up this morning, I already knew what was on the agenda for breakfast.

And I was a little lot excited.


I cooked up another regular buckwheat bowl, but you can bet your bottom dollar that it was the toppings that stole the show today:

A little granola, a drizzle of maple syrup, and half of a crumbled Oatmeal Raisin Banana Muffin. It would have been the whole muffin, but somebody got a little impatient and ended up eating it too soon.




You know, dare I say that I think I’m actually enjoying buckwheat bowls MORE than oatmeal now??? Who would have ever thought…


Just in case you all were wondering…no, I don’t sit in front of my picture window every morning and eat my breakfast. Sometimes I think about pulling up a chair, but that’d just be weird.


Hopefully, one of these days we’ll find a kitchen table to eat at!


No workout planned for today, but I might end up squeezing a little yoga in later. For now, time to go get ready to tackle a bunch of errands in all of this lovely rain we’ve got goin on outside.

Double Date Night & A Cookie Bar Recipe

Yikes! How terrible of me…I promised you all a recipe yesterday and I didn’t deliver! Surprised smile

Well, Jay and I set out yesterday afternoon to run the errands that we needed to take care of, but things took a little longer than we anticipated and we never made it back home before our double date night plans!

We were first invited over to Joe & Kate’s place for dinner, where we were greeted with some amazing smelling chicken tacos!


And they were healthy chicken tacos to boot! Thumbs up

I enjoyed two mini whole wheat tortillas, filled with (hidden) black beans, taco-seasoned chicken, lettuce, salsa, cheese, and homemade guacamole.


Kate actually made her guacamole using equal parts of diced avocado and cucumber, which helps cut back on the fat. Very delicious, and very similar to my healthified guacamole, too! I had some extra guac along with some blue corn chips and a side of Spanish rice.




After dinner, the four of us made our way out to the Albany Devils hockey game.


This is the game that I actually bought Jay the tickets for for our “Paper” anniversary. I had checked with Joe ahead of time to see if they’d be interested in joining us, and the plan was a GO!



YAY for double Date Nights!!!



Thank goodness we were in a box that had a TV in it so we could watch the Jets game…otherwise we may have had to leave the hockey game early to go watch. Winking smile


So after the hockey game was over, we went back to Joe and Kate’s to watch the rest of the game. All I can say is…

GOOOOO JETS!!! Open-mouthed smile

On Friday, we officially got our stove back up and working and I was determined to bake something. Granted, it still is not easy, since we have no countertops or sinks, but I had to attempt at least one goody!


I attempted to make a healthier version of an oatmeal raisin cookie bar, which turned out pretty good for the most part. They were a little bit drier than normal, which I attribute to reducing the butter. But otherwise, they have really good flavor!


If I were to make these again (which I probably will) I might try to add in a little applesauce, as well as reduce the amount of oats in the bars. If you decide to give them a try, feel free to mess around with the ingredients…if you come up with a winner, let me know! Open-mouthed smile



I may feel the need to attempt to bake something else today…we’ll see where the day brings me!
