Iiiiiit’s Wednesday! I really have no reason to be excited about it being Wednesday, but I’m gonna go ahead and use an ! anyways.
Hey, sometimes a little extra enthusiasm in the morning is a good thing, right?
So did anyone else watch the debate last night? Did you cringe just as much as I did? Ughh, good grief. Luckily, politics is not really a topic I care to ever discuss here in any sort of detail on the blog (it brings out the crazy in people, I swear) so that’s gonna be the extent of my discussion on THAT one. Moving on…
Shortly before the whole debate viewing (and watching The Voice) it was easy dinner time up in herrrrr.
I made up some chicken salad for the boy and a batch of sweet tuna salad for me. I wound up adding in quite a few veggies so it was voluminous enough for me to divide into two batches – hello, today’s lunch!
I served my sweet tuna salad on a big bed of fresh spinach, along with two slices of crumbled turkey bacon and a serving of Kashi crackers.
It was really, super good.
While we were eating dinner, we also decided to try out two of the new Oktoberfest beers that have been sitting in our fridge. While grocery shopping on Sunday, I discovered that our local Price Chopper added in a “make your own 6-pack” area, full of fun beers…I couldn’t resist.
I filled up my six pack with all Oktoberfest/Pumpkin beers and last night we decided to try these two.
The beers were good, but for whatever reason, neither Jay or I were in much of a mood to drink beer. Unfortunately, I only wound up drinking about half of my beer…total waste. Boooo.

Breakfast
This morning, I went straight for my hot mug of steamy coffee and sipped on that while preparing breakfast.
Seriously, what is it about a hot mug of coffee that is so comforting??
Today’s breakfast of choice was a good mix of lots of fun stuff…
One egg + 2 egg whites scrambled with broccoli and ketchup and half of a toasted pumpkin spice bagel topped with pumpkin and peanut butter.
Some protein, some carbs, some veggies, some caffeine…all sorts of awesomeness right there, I’ll tell ya!

Katie @ Talk Less, Say More says
Yes coffee is so comforting. In fact, I think I need some more comfort. ;)
Elaine says
Politics really do bring the crazy out in people! I live in D.C. and am surrounded by it. Whenever someone brings up anything political, I always change the subject. Noooo thank you!
Ellie@Fit for the Soul says
haha I always always try to avoid those talks! Umm is that unpatriotic and sad of me? I’m just scared of people turning into scary animals when the P word comes out. lol.
And Courtney, I agree that there’s nothing better than a balanced breakfast! I always feel content when I know my main meals contain all of the right amounts of nutrients. :D
Elaine says
I don’t think it’s unpatriotic at all! It’s fine for all of us to have opinions, but there is something about vocalizing those opinions in political conversations that always creates tension. So, I just prefer to keep my opinions to myself and avoid all of the craziness. :)
Jana @ Newly Wife Healthy Life says
I watched the first hour of the debate (then I got too tired and went to bed!) and I totally agree with you.. Politics is definitely not something I feel the want or need to discuss on the blog! We all have the right to our own opinions, so let’s just keep the sanity and the peace! :) Have a great day!
Natalie @ Free Range Human says
I think it’s refreshing that politics don’t make their way into our little corner of the blog world too often. It definitely divides people and I would hate for that to happen!
Colleen @ The Lunchbox Diaries says
Your extra enthusiasm this made me laugh! Have fun with yoggaaa :)
Hope @ With A Side Of Hope says
I totally agree on coffee being comforting. There is nothing like a nice cup of decaf at night while watching tv :)
Nicole says
Make your own six-pack at PC?! How awesome is that!
Tiff @ Love Sweat and Beers says
Ummm, bacon and beer? Yes please! haha That’s a beer half full – enthusiasm helps. ;)
Beks says
I usually only discuss politics with people that I know agree with me, otherwise it just turns into a shouting match. NEVER fun.
To make the debate more interesting for me, though, since Obama and Romney kept getting in each other’s faces, I imagined they were fighting like they were in “West Side Story,” complete with snaps and girly jumps. My dad had no idea WHY I was giggling.
Courtney says
Hahaha, that is pretty funny! :)
Smile says
Hi Courtney
I love reading your blog, but was curious what job you have or our looking for. I don’t know if you didn’t want to discuss it just was wondering what is on the horizon …
Courtney says
It’s not really something I’m looking to discuss right now, since I’m still working on figuring quite a few things out and it is sort a personal matter. As much as I do love sharing many aspects of my life on the blog, it’s important for me to keep some things private too, you know? I’m hoping that things will work out soon :)
Smile says
Are, not our
Amanda @ .running with spoons. says
Extra enthusiasm is always a good thing… especially when it’s still so dark and gloomy at 7:30 in the morning. And come to think of it, an extra cup of comfort probably wouldn’t hurt either ;)
Kelly M says
Courtney, you put ketchup on your broccoli w eggs?? I’ve never seen that before! I usually add hot sauce or something but the ketchup def makes me laugh :)
The tuna salad looks awesome esp. with turkey bacon. Have you heard about the supposed bacon shortage this year?? hah. I wonder just how true that is…
Yes, the debate was very frustrating to watch…thankfully, it’ll be over after the election (and then another term begins!).
:)
Courtney says
Haha, Kelly, I put ketchup on everything ;)
Caitlin @ This Bride's Joyride says
Pretty sure that a comforting cup of coffee in the morning is my absolutely favorite part of the day. I swear, I’ll easily give up sushi and alcohol when I’m pregnant one day but I already fear the thought of giving up coffee.
Amanda says
Binders full of women. Four words that summed up that debate. Ahem.
I’m Canadian but I’ve been following your election process very closely. It’s much more exciting than ours ever are:). I’m hoping for a great result in November!
Brandi says
I love to enjoy my first cup in quiet and just be there with the coffee….;) It really gets my day going!
Have a great day Courtney!
Kim@hungryhealthygirl says
Totally with you on the coffee! I can see the steam rising in your cup and it’s making me think I need another. Have a great Wednesday!
Rachel says
haha I didn’t watch the debate all my friends and coworkers did and are freaking out over it and I’m all “Well… I saw a scary movie last night” haha!
Khushboo says
Agreeeeeeed about hot coffee! Next time add in some cinnamon, it takes it to a whole new level :)
Courtney says
You know, I actually can’t get into the cinnamon in my coffee! I don’t like how I can’t seem to get it to blend in, and it creeps me out when it floats on top…I don’t know, I guess I’m weird like that ;)
Hannah @ CleanEatingVeggieGirl says
Thanks for the extra enthusiasm! We all need that sometimes, especially during the middle of the week. I did my yoga session this morning and I am feeling great now. Have an awesome day! :)
Life's a Bowl says
Haha, I liked the added little pep in your step or rather, sentence :P My hubby and I tried a few different pumpkin beers last fall and were sadly disappointed and we weren’t big fans… I can’t remember which ones we tried but do you recommend any specific ones?!
Courtney says
Hmmm…I think Sam Adams makes one that’s pretty good. Blue Point Brewery also makes a pumpkin ale that I love.
We have a few more from our 6-pack to try out that are pumpkin, so I’ll be sure to share if they’re good ;)
Heather @ girlyeverafter says
I haven’t got my pumpkin butter yet this season, what am I thinking?
Lauren says
I think I need to get into that show. I keep hearing great things about it. Hope you are having a wonderful day!
Renee says
Haha the debates are fun we like to mute it for a minute and add our own comments are to what they are really saying. It makes it much more entertaining!
I don’t get the Voice sorry I just don’t. I’ve been diggin pumpkin beer for a month now I’ll be happy when they stop selling it so I stop drinking it…it’s so good when it hits your lips! :)
Have a great day!
Ashlee says
If you love pumpkin beer like I do, and I think you do, find Wasatch Pumpkin Ale! It’s THE best! IT tastes just like pumpkin pie mmm
Annette@FitnessPerks says
I love a good sweet and salty mix for b-fast. looks tasty!
Jackie says
Hi Courtney! I just wanted to tell you that I really enjoy reading your blog and that I have something for you to try that I think you will like. My friend told me about lining the rim of your pumpkin beer glass with a mixture of light brown sugar and cinnamon. I haven’t gotten a chance to try it but pumpkin beer, cinnamon, and brown sugar sound like an amazing combo to me : )
michelle kim says
I find coffee an essential part of my morning routine. You’re right… there’s something so comforting about it :)
Congrats to all the winners!
Michelle@Peachy Palate says
Hump day always requires some extra enthusiasm..and a yummy breakfast!
Lisa says
Coffee is indeed one of the most comforting things about the day in my opinion! I’m not sure what it is about it…maybe just the routine and warmth of it. I love it regardless! These days I’ve been adding pumpkin pie spice to my coffee and its just marvelous.
Katie @ running4cupcakes says
I swear that sometimes the best part of my morning is my cup of hot coffee (or latte, in my case!). . . especially in the winter!
Caryln @ carylnrambles says
I feel the same way about politics! I have my beliefs but I am not going to shove them down someones throat, mainly because I don’t want someone doing that to me. That being said…I seriously thought Romney and Obama were about to get into a straight up girl fight…hair pulling, scratching and all lol
Marielle says
Lol- I feel the exact same way about politics, I refuse to bring it up on twitter or fbook because I don’t want to start any arguments. :)
And coffee always has had a calming affect on me for whatever reason!
Happy Wednwaday!
Jillian @ Sprinkle Massacre says
So funny – I just did a create your own 6-pack at Wegman’s and the Dundee Oktoberfest was in mine! I cannot get enough of pumpkin and Oktoberfest beers right now – I’ve been choosing it over wine, which says a lot for me, haha!
Jen@HealthyFoodandFamily says
Politics really does bring out the crazy, I can’t take it! I’m one of those people that are probably hated because it really just doesn’t interest me. I rarely know what’s going on and would much rather read blogs, a book or watch some trashy TV :)
Bek @ Crave says
That coffee is steaming! Your eats look yummo! ;)
