3 Recipes for Back to School

Hey guys! I’m popping in quick today with a little bit of a different post than usual, but after hearing about this company and the campaign they’re currently running, I knew it was something I just had to share.

Whenever I hear about organizations that benefit children and help to raise awareness and educate families on the benefits of healthy eating, I’m immediately intrigued. And that is exactly what Produce for Kids® does.

They’re a national organization dedicated to doing just that, providing simple meal solutions and raising money for children’s non-profit organizations. Produce for Kids partners with the produce industry and local grocery store retailers to host two campaigns each year. During these campaigns, they raise funds for children’s nonprofit organizations while educating families about the benefits of healthy eating with fresh produce. The best part (besides fruits and veggies, of course): ALL funds raised stay local and go to area children’s organizations. I love that, so, so much.

While there are a number of supermarkets partnering with Produce for Kids® for the Annual Get Healthy, Give Hope campaign, one of our local stores here is Price Chopper Supermarkets. The joint campaign, which runs June 15 through July 26, will educate families on the benefits of healthy eating and raise money for local Children’s Miracle Network Hospitals® and Children’s Hospital at Dartmouth.

When shoppers purchase participating fresh fruits and vegetables at Price Chopper, they will be helping to make a donation to local children’s hospitals. Participating produce suppliers will make a sales-based donation; the more participating produce brands* a family buys, the more hope they can give to local children.

Of course, what fun is it to talk about buying fresh produce without sharing how to use all of the delicious stuff?! So today, I’ve got 3 fun recipes that are perfect for the adults AND the kiddos.

Pistachio-chip Trail Mix

Pistachio-Chip Trail Mix

  • Prep Time: 5 minutes
  • Serves 2

Ingredients:

  • 2 Setton Farms Chewy Bite bars (crumbled)
  • 2 Tbsp. milk chocolate chips
  • 2 Tbsp. unsweetened shredded coconut
  • 2 Tbsp. sunflower seeds
  • 1⁄4 cup banana chips

Directions:

1. Combine bars, chocolate chips, coconut, sunflower seeds and banana chips in sandwich bag; mix well.

 

Tropical Smoothie & Breakfast Pizza

Tropical Smoothie & Breakfast Pizza

Tropical Smoothie:

  • 1⁄2 cup peaches, peeled, sliced
  • 1 tsp. vanilla extract
  • 1 cup 1% milk
  • 1⁄2 banana
  • 2 Tbsp. honey

Breakfast Pizza:

  • 1 (6-inch) whole wheat pita
  • 3 Tbsp. almond butter
  • 3⁄4 cup apples, sliced
  • 1 Tbsp. sliced almonds
  • 1 tsp. honey

 

Directions:

Topical Smoothie:

1. Place peaches, vanilla, milk, banana and honey in blender and blend until smooth. Add ice as desired for thicker smoothie.

Breakfast Pizza:

1. Toast pita, top with almond butter, apples and almonds. Drizzle with honey and cut in half.

Vegan Greek Pitas

Vegan Greek Pitas

  • Prep Time: 15 minutes
  • Serves 3

Ingredients:

  • 1 Tbsp. olive oil
  • 1 Vidalia onion, chopped
  • 1 red bell pepper, chopped
  • 11⁄2 tsp. oregano
  • 3 cloves garlic, minced
  • 3 whole wheat pita breads
  • 1⁄2 cup hummus
  • 6 Romaine lettuce leaves
  • 1⁄4 cup cherry tomatoes, chopped
  • 1⁄4 cup Kalamata olives, pitted, chopped

 

Directions:

1. Heat oil in large skillet on medium heat. Add onion, pepper, oregano and garlic. Cook 5 minutes or until onions are translucent.

2. Warm pitas (optional) in microwave or stovetop.

3. Slice each pita in half, making six pockets. Spread hummus on inside of pitas. Fill evenly with pepper mixture, lettuce, tomatoes and olives.

    I love all fruits and veggies but I have been especially loving bananas and nectarines. I slice bananas up and top a whole grain toasted english muffin with peanut butter and cinnamon along with the banana slices! I enjoy just eating the in-season, sweet nectarines!

    I have been all about blueberries and grapes lately. I can't believe how delicious frozen grapes are in smoothies and I just made some blueberry buckwheat muffins yesterday!

    My favorite produce is watermelon and lately I've been enjoying it by freezing it and then tossing it in the ninja with a splash of soy... Only flaw? Gotta make 2 (the second with dairy) because the poodle will give me pathetic eyes until he gets a smoothie too :-/

    I have been loving berries (strawberries and blueberries) in everything...salads, smoothies, on their own!!! I am so fortunate that my two kids (22 months and 7 months) love all produce (so far, knock on wood!)!!

    Mango!!! I know this may sound odd but cooking up mango in oatmeal (with a few chia seeds, vanilla, and sweetener of choice) has been almost like a breakfast version of mango sticky rice!!!

    I mix my faves cauliflower, brocc, brussels sprouts and kabocha squash....oh and always love 'shrooms. Clearly I'm a winter veggie lover though tomato sauce, cukes and even the red/orange bell peppers. Apples are my all time favorite fruits though and honeydew melon. Ugh...love it all (:

    Been loving mixed greens lately. All of my dinner left overs have been thrown on top to make tasty lunches the next day. Left over burger from dinner chopped up and thrown in w/ lots of other veggies. Crock-pot santa fe chicken tossed over the mixed greens...so yummy.

    I love Kale! I've been eating it every day with eggs or grits for breakfast. All I do is sprinkle the Kale leaves with garlic powder and salt and cook them in a pan in the roaster or oven until they are crispy. So much fun to eat and delicious. My 11 year old daughter likes them too. She will come snitch some off my plate when she's through with hers.

    I have been loving me some watermelon and mangos! My favorite thing to do with them is share them with my little Lucas. He cant get enough! :O)

    My favorite produce is definitely fresh strawberries. They are in season locally and I have been loving them. On salads, in smoothies, on waffles, in a crisp....you name it!

    I've been eating tons and tons of spinach in smoothies! I use it frozen so it makes them even more creamy!

    I've been loving adding spinach to my smoothies! Spinach, frozen pineapple, frozen mango, and a half if a banana... Yum!!!

    My favorite summer produce at the moment is definitely berries, specifically strawberries! They have been so succulent and sweet as of late, and go perfect in my breakfasts or just on their own! :)
