How long has it been since we did a WIAW post around here? I think it’s been like, almost two months or something like that?
I know some people enjoy these posts, and some people don’t, which is totally cool. But every once in a while, I think it’s fun to hop on the WIAW bandwagon and share what I’ve been eating. Besides…I’m always nosey like that and enjoy seeing what others are eating, too. It’s fun to get some new ideas, right?!
Today’s post is a recap of Monday’s eats. It includes everything, minus leftover bites of Lucas’s dinner (which happens almost daily), and a few handfuls of granola in the morning before heading off to work. Other than that, here’s a look at what I ate…Monday.
Breakfast
An Oikos vanilla greek yogurt with strawberries, blueberries, and Love Grown Foods granola.
It’s an oldy and a goody, but it doesn’t always do much for my hunger, so I’m usually ready for a snack a couple of hours later. Speaking of snacks…
Mid-Morning Snack
A cranberry almond dark chocolate goodnessknows bar…and I will tell you that these have absolutely become my new favorite snack bar.
I’ve been in touch with the brand for a while now, and they’re super excited about their launch into new stores (they were originally only available at Costco) and availability nationwide. And good news…if they’re not yet available near you (they’re rolling out within the next couple months), you can still buy online if you want to get your hands on ‘em right now.
The bars come in three flavors:
- cranberry almond dark chocolate
- apple almond and peanut dark chocolate
- peach and cherry almond dark chocolate
And while they’re all equally delicious in their own way (I’ve tried them all…numerous times!), my favorite is definitely the cranberry.
I’ve been eating them for a morning or afternoon snack at least 3x a week for the last month or two, and they’re totally delish!
Lunch
Another burger topped salad (now we’re out of leftover burgers…boooo) with lots of veggies, feta cheese, dried cranberries (see, they’re my fave!), avocado, and balsamic vinaigrette.
I can’t tell you how much I’ve been loving my salads lately…I’d really missed them the past few weeks!
Mid-Afternoon Snack
A couple small handfuls of almond nut-thins with a couple not-so-small scoops of peanut butter.
It’s almost time to restock both in the desk drawer!
Dinner
Jay had to run a couple of errands after work so he didn’t wind up getting home until a little later. By that time, I had already fed Lucas and we were in the midst of playing, and I never took the time to pick something out for dinner (fail on my part…ahh well). I started rambling off a couple of ideas we could whip up quickly, and as soon as I said BLAT’s with sweet potato fries, it was a done deal for both of us.
Sometimes, nothing beats a classic BLAT, am I right?
Evening Snacks
Jay and I both had a drink with dinner (beer for him, wine for me), and I went ahead and poured myself a second glass to enjoy while we sat back on the couch and watched some more Bachelor in Paradise (recycled photo, obviously, since we now have painted walls!).
And along with my second glass of wine, I also snacked on 3 chocolate chip cookies from our neighbor. Which made me realize…I seriously need to make a batch of cookies, like, ASAP. Any requests??
So there you have it…another WIAW in the books!

I was just trying to remember what cookie recipe you made that had caramel in it? I’m pretty sure that was the ingredient…or butterscotch? They were really delicious!

Burger salads are where it’s at! I love your wiaw posts. They always give me inspiration, especially when you share Lucas’s meals too. Caroline will now eat about anything and just becoming picky. 9 months and picky? Must be her mama!!
Oh and you’ll prob smack me after you try them, but the cinnamon honey nut thins + any nut butter (like justins maple) = OMG

I’m trying so hard not to jump on the pumpkin/fall everything bandwagon yet. But let me tell you, it sure is a struggle. Come September, I’m officially declaring it open season.

I’ve been eating a lot of “clean” food for this challenge I’m doing. I don’t think I prepped as much as I thought I did, because I was throwing stuff in my lunch bag this morning. Whoops. Oh well. Changing a lifestyle takes work. I do love eating every three hours, though. No more hangry! Also, Greek Yogurt and Kashi GoLean Crunch is awesome.

I’ve really been into Honey roasted peanuts and, also, greek yogurt + pb powder. There are also these dried chile spiced fava beans (called Habas) from mexico, I have totally been into – they are hard to explain, but kind of like a spicy nut, but it’s a dried bean……sounds odd to some maybe, but I think they are delicious.

Another one for making summer last as long as possible (my new job doesn’t start until October so I get to travel and live the summery life til then), although I’d be happy to have apple and pumpkin spice flavors become year round things :)

Hi Court! Those bars sound interesting. And you know, I caved and bought pumpkin yogurt last week. But I still have to go on my summer vacation (leaving tomorrow for Hawaii) before I really get into fall! As far as leftovers, I always eat off my husband’s plate hahah. Happy Wednesday! :)

I’m not a real bar fiend but those look good. They remind me a little of florentine cookies – maybe you should bake those because they are ridiculously good?! – and the name is pretty sweet, too.
Food-wise I would jump on the fall/pumpkin wagoon but I’m definitely not ready to kiss summer weather goodbye.

Can I ask how you cook your sweet potatoe fries? They always look amazing and mine never turn out that good!

I feel like we switch it up every time! But this past time, I soaked them in cold water for about 30 minutes. Then I coated them in an egg white (whisked beforehand), sea salt, and some garlic powder — baked at 425 for 10 minutes, flip, then an additional 10 mins. They turned out great, so I’d definitely recommend that method – they were actually crispy for once! :)

i love putting burgers on my salads! some people think it’s weird but i think it’s delicious.
i also need to get my hands dirty in the kitchen soon! craving a batch of homemade cookies now ;)
