Fresh Fruit Salsa! (see recipe below)
Yesterday, I was lucky enough to start off my morning with this delicious spread…
…and had the pleasure of enjoying it all with these lovely ladies!
Yes Yes, a “Blogger Brunch” it was! Our fantastic group of 8 was able to coordinate a local healthy living bloggers meet up, and I was totally stoked to meet all of these gals: Jen, Amy, Rebecca, Marcie, Lauren, Julie, & Heather. We did everything pot luck style, putting all of our healthy culinary skills to work. I’ve gotta say, it was quite neat to be in a room full of girls all attempting to capture their food through photos. The blogger action began rather quickly, since I think we were all experiencing some rumbly tummies!
I decided to bring along a fruit salsa with whole wheat cinnamon-sugar pita chips, as well as a batch of my beloved Granola Blondies.
Fresh Fruit Salsa Recipe
2 kiwis, peeled & diced
2 golden delicious apples, cored & diced
1 cup raspberries
1lb. strawberries
1 cup blackberries
1 tbsp brown sugar
3-4 tbsp fruit preserves (I use Polaner Strawberry All-Fruit)
In a large bowl, thoroughly mix all fruit, preserves, and sugar. Cover and chill for 15 minutes. ENJOY! :-P
*You could probably get creative here and really use any berries that you like.*
It was total foodie heaven with all of the delicious treats that were up for grabs.
I started things off with a citrus spritzer (aka, mimosa). Nice and refreshing on a warm summer day 8-)
It was a little overwhelming to try to decide what foods to start with, since I pretty much wanted to load my plate up mountain-style with everything I could fit from the table. However, I tried to take things easy and pace myself.
Plate #1: Strawberry & Feta salad, fresh bread with local scallion hommus, a mini frittata, & some fruit salsa.
Eventually, it was time to make my back for some sweet treats. Ahhh sweets, how I love you so!
Julie’s Savvy Scones were totally rockin’ my world. They were incredible!
My Plate #2: Superfood Cookie by Jen, & 2 savvy scones (trying a little all of 3 kinds, because really, how can you choose?) ;)
More fun blog decor!
Me…being goofy :-P
Heather was nice enough to host the gathering at her apartment (thanks again, Heather!), so we spent a good few hours chatting away about lots of “bloggy” things. By the time we left, I felt like I had just left a blogger tutorial session; I learned so much! Now let’s just hope I can retain it all. ;)
Each and every one of these girls was amazing, and I am so excited to know that they are all so close to little ‘ol me. I’m definitely looking forward to our next gathering – hopefully with a few more friends added to the list!
Surprisingly enough, this was only a sliver of the fun I had yesterday! I’ll have the rest of my Saturday recap coming soon – but for now, I’m thinking it’s time for a little pool break. I hope you’re all enjoying your weekend! :)
