Continuing on with my fun-filled Saturday…and funfetti cake mix cookies!
Housewarming Party
The next event on the agenda was a housewarming party for my friend, Gabby.
Well, let me just say that Gabby’s new home is ridiculously adorable! I fell in love with the entire place, from her renovated kitchen & bath, to her gorgeously decorated walls. Gabby and I share an obsession over the “Live, Laugh, Love” phrase, and she had the cutest wall devoted entirely to that. Confession: I totally left her house with a TO-DO list about 15 items deep for what we need to start doing over here in the Horan household. :shock:
Old work buddies: Me, Wendy, Brooke, & Gabby. I miss seeing these girls everyday! It’s always so fun with them, as you can probably tell here. ;)
Gabby had out quite a scrumptious spread of snacks and appetizers, too.
What’s that you ask? What are those delicious looking cookies on the blue plate?
Ahhhh, well it just so happens that they came from yours truly! I whipped up a batch of funfetti cake mix cookies on Friday to bring as a little housewarming gift. In case you’ve never made cake mix cookies, FYI: They are super easy, and are a perfect go-to “recipe” in a pinch.
Cake Mix Cookies:
1 box of your favorite cake mix
1/4 cup oil
1/4 water
1 egg
Mix all ingredients together. Drop by spoonfuls on a baking sheet about 2 inches apart. Bake in a 350 degree oven for 10-12 minutes. ENJOY! :-D
So I didn’t end up taking any photos of my plate plates at the party, but I can tell you that I pretty much enjoyed a little bit of everything, including some veggies, a mini quiche, some of the most amazing fruit dip ever, a cookie, brownie, AND some of THIS:
A tortellini fruit salad. Crazy, right? Well the savory cheese tortellini mixed with the sweet, fresh fruit was outstanding. I’m already trying to figure out a way to recreate the recipe. It’s perfect for a summertime party or potluck.
Baseball Game Outing with the Softball Team
After leaving Gabby’s, it was time for Jay and I to head to our next (and last) stop of the day: a Valley Cats baseball game! :)
My dad organized a little “team outing” for anyone who wanted to join from our softball team. We ended up with 16 of us, which is a pretty good-sized bunch, wouldn’t you say?
For the non-locals, the Tri-City Valley Cats are a local minor league baseball team, whose field is only about 15 minutes away from our house. My family loves going to the games during the summer, since it’s something different from regular routine, and it’s relatively cheap (our seats only cost $8 each.)

I was still pretty full from Gabby’s party, so I didn’t go crazy at the game, despite the fact that they have some pretty killer concession stand snacks that all smelled delicious. Along with having a beer and a half, there was one item that I already knew I was not going to be able to pass up…
Kettle Corn!
I am an absolute, self-proclaimed Kettle Corn fanatic. It is one of my favorite summertime snacks that I wait longingly for every year. Surprisingly enough, this was my first bag of the season (what is wrong with me??), so I savored every kernel that entered my mouth. :-P I begrudgingly happily shared a bunch of my kettle corn, and still had about 1/2 a bag left to bring home. YESSS.
After the game, we stayed to watch a little fireworks show (horrible picture, sorry!)
and then it was finally time to call it a night.
It was certainly a long day, but a fun-filled one at that! I’m so lucky to have such great people around me to spend my days with!! :-D
So far, today’s been a pretty relaxing day, spending time by the pool. Jay, however, has been BUSY BUSY BUSY! I’ll make sure to show you guys what’s goin’ on soon. Let’s just say, I may have made a tiny dent in my “TO-DO’” list. ;)
