I’ll Be There In Five!

Wahooo!! Spring has officially sprung! Happy spring to you all today! Smile

Last Night’s Dinner

On my way home from work last night, I got a call from the hubster asking how much longer it was going to be until I got back. This is rare for him to ask, so I told him about ten minutes and then asked why. His response?

“Because dinner is ready and waiting in the oven!” My response?

“I’ll be there in five!”

Don’t worry I didn’t speed too much.

For those whole five minutes, I assumed that I’d be coming home to a plate full of pierogies, since that’s what we had talked about earlier, so imagine my surprise when I walked in to THIS beauty…

Homemade pizza with grilled chicken, peppers, and onions. Gimme, gimme, gimme!

I loved not only how big and fluffy this batch of crust was, but how nice and garlicky it was, too. We do love us some garlic…it’s a good thing it’s mutual.

I enjoyed two slices of pizza immediately after changing into my cozies, plopping on the couch, and watching some How I Met Your Mother.

The show was good…the pizza was great.

Breakfast

I was really having a bit of a predicament this morning. We have a lot of veggies right now, some even chopped up, so I was feeling compelled to make an omelet. But in the end, memories of yesterday’s oats won the victory.

Today’s batch was super similar to yesterday, with the only swap being 1/4 cup egg whites for the mashed banana. It made it slightly less sweet but gave it more of that French toast flavor that I love.

Toppings for today included half of a chopped apple, Love Grown Foods granola, and a batch honey cinnamon peanut butter made with my PB2.

Now, it’s about time for me to tackle today’s workout, which I’m sure would be a whole heck of a lot easier if my legs weren’t feeling like the lead rods that they are right now. Oh boy!

What are some of your favorite things about spring?

I love the warmer weather (obviously), pretty flowers, the Farmer’s Market going back outdoors, the birds chirping in the morning, Tulip Fest, the start of softball season, and all of my favorite soft serve ice cream places re-opening. Winking smile

    The bright nights definitely! The clocks don't change until this weekend coming over here but we're already getting a stretch (in Ireland! :)) That pizza looks so good, I don't think I could have stopped at two slices though! Garlic all the way!

    I appreciate spring so much more now that I live in NH! I also go to this coastal town in Maine a lot and in the spring it basically reopens - I love it!

    I LOVE SPRING! I love the smell in the air. It just smells fresh and happy... sounds odd, but I have been in such a good mood since the weather has gotten sunny. My flowers are coming up and I cannot wait to plant more!

    Hi Courtney.. that pizza looks amazing! What did you use to make the crust? Did you make it yourself? I would LOVE the recipe! :D Some of my favorite things for spring are going to the beach, walks outside, Sunday brunch outside and fro-yo... although that's really an all year thing.

    Aww what a lucky lady! That pizza looks like something worth speeding home for :) In Florida, spring weather is pretty much like every season's weather, so no fun seasonal changes for me, but I do love the later/lighter nights of daylight savings time!

    that first photo of the tulips is beautiful! i love tulips. we just planted some last fall for the first time, and they're starting to poke out of the ground! i can't wait for them to bloom. :) i also love that everything is starting to turn green and look alive again. the warmer weather is definitely a plus too!

    The pizza looks yummy! Peppers and onions are my favorite kind of pizza, throw on some crushed pepers flakes and I am in heaven!!! I love How I Met Your Mother, but I really love Two Broke Girls. Last night was hilarious! I love the lady from Poland, I can't rememebr her name cracks me up!!!

    Awwww that's so sweet of your husband, and he did A PERFECT JOB WITH THAT PIZZA! I'm impressed. :) I'm glad too that my fiance and I share a love for garlic. Oh! have you tried the Greek spread/dip called melitzanosalata? IT's an eggplant/garlic spread and prob. the strongest one you'll ever try.

    The boost in my mood is my favorite thing! I definitely get a little seasonal depression during the cold, grey winter, but spring INSTANTLY makes me feel lighter and brighter. It's kind of amazing, actually!

    I love spring! It's not overly hot and not cold, it's the perfect temperature to be enjoying the outdoors. I love being able to eat outside on a restaurant patio with friends, drinking my morning coffee on the deck, farmers markets, and gym classes held outside. I could just go on and on about how much I love spring.

    I checked out those pierogies, they look yummy! I lived in Poland last year and I have been trying to recreate them but alas, to no avail! Do you know what sort of a recipe Jay uses? Or is it a well kept secret? :D x

      I don't think he really uses a recipe - we usually just saute them up a bit and add whatever we have on hand...veggies, chicken, etc. They're super easy and great when you're pressed for time!

    Delicious-looking pizza and breakfast! My favorite thing about spring is bittersweet... I love all the blooming flowers and trees blossoming... but they give me some wicked allergies! I also love going to the park and seeing the super cute ducklings and goslings!
