Oh boy, do I have a delicious treat for you guys today.
Although, I must confess…I cannot take credit for this fantastic recipe. That credit can go to the wonderful and incredibly talented Andie Mitchell.
I first had the opportunity to meet Andie about 5-1/2 years now (sheesh, time flies!) at the Healthy Living Summit conference in Chicago.
I remember I had already been a fan of her blog and to this day, I still remember just how incredibly genuine and kind she was.
I’ve continued to follow along with her blog and her many accomplishments (her last book was a best seller!), and I was both thrilled and honored when she reached out to me and asked if I’d like to share one of the delicious recipes from her new cookbook, Eating in the Middle: A Mostly Wholesome Cookbook.
The minute I started browsing the cookbook, I knew I was going to love it. I love Andie’s philosophy on food (eating mostly wholesome without the guilt), and I found myself bookmarking a TON of her recipes just at first glance.
By the way, you guys; the cookbook is on sale TODAY ( you can order it HERE!!), and seriously…so many of her recipes have left me drooling.
The photography is just beautiful, too.
So while my photography skillz may not be as great as Andie, I can still do a fairly good job of following a recipe…and this recipe for Peanut Butter Granola Parfaits is one that I am just too excited to share with you.
I don’t make homemade granola all that often, but after seeing just how delicious this batch turned out (peanut butter lovers, unite!!), I can totally see where this would become something I could make (and eat) on repeat.
While I made the full batch of granola this weekend, I only made two parfaits to start (I used non-fat vanilla Greek yogurt, my favorite), but neither of them lasted more than 24 hours.
Oh, and I put them in wine glasses because, well…if I can’t drink out of them, I might as well eat out of ’em, right? ;)
Peanut Butter Granola Parfaits
Ingredients
Granola:
- 3/4 cup old-fashioned rolled oats
- 1/4 cup chopped roasted unsalted peanuts
- 2 tbsp creamy natural peanut butter
- 2 tbsp honey
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Parfaits:
- 4 cups plain 2% Greek yogurt or your favorite low-fat plain yogurt
- 2 large bananas sliced
Instructions
- For the granola, preheat the oven to 300 degrees F. Line a large rimmed baking sheet with parchment paper
- In a medium bowl, combine the oats and peanuts.
- In a small microwave-safe bowl, combine the peanut butter and honey. Microwave on high until melted, about 30 seconds. Stir in the cinnamon and salt. Stir the mixture into the oats and peanuts. Spread the oats onto the prepared baking sheet.
- Bake, stirring every few minutes to prevent burning, until golden, about 10 minutes. Transfer the baking sheet to a wire rack and let the granola cool, stirring occasionally. When cool, transfer the granola to an airtight container and store at room temperature for up to 3 weeks.
- For the parfaits, in each of 4 small Mason jars or small bowls, layer 1/2 cup of the yogurt, an eighth of the sliced bananas, 2 tablespoons granola, then another 1/2 cup of the yogurt, another eighth of the sliced bananas, and another 2 tablespoons of granola. Serve immediately or cover and refrigerate for up to 3 days.
