It’s been a little while since I’ve shared some recent meals with you guys!
So today’s roundup includes basically any meals that I was able to find pictures of on my phone dating back through the beginning of January. There aren’t a ton, considering that’s about two months worth, but here we go.
Slow Cooker Beef & Beans Chili + Cornbread
Anytime you see chili on our dinner menu, I can guarantee you it’s because I was really craving cornbread. Chili is delicious and all that jazz, but if we’re being honest, it’s really just a vehicle for my beloved cornbread. I tend to alternate between this recipe and this recipe for our cornbread, mostly because I can never really decide which is my favorite – they’re both awesome!
Balsamic Baked Chicken Breast With Balsamic Tomato Sauce and Mozzarella Cheese + Roasted Potatoes + Green Beans
This one-dish chicken recipe has become one of our absolute favorites. The flavors of the balsamic and tomatoes with the cheese are just SO. GOOD. And when it comes to roasted potatoes, I now only cook them in our air fryer, because they come out perfectly crisp every single time.
Turkey BLAT Sandwiches + side salads
Sometimes, there’s nothing like a classic sandwich for dinner. Well, for us at least! I decided to add some deli turkey to the BLAT’s last minute, just to get some added protein in there, and these really hit the spot.
Garlic Butter Flank Steak + Roasted Broccoli
I know I already shared this one in my last post, but it’s worth mentioning again because it was just so good. This was a dinner that we had on a low-carb/high fat day, and it’s most definitely a steak that I’ll keep in our rotation. Plus, anytime there’s a steak involved, Jay is an extra happy camper.
Sheet Pan Chicken Sausage + Roasted Veggies with Cauliflower Rice
This is another meal that we like to add into the rotation frequently, and also a lower-carb favorite, mostly because it’s just so crazy easy to throw together. And if I’m really on top of my game, then I usually try to have the veggies cut and prepped over the weekend. So when it comes time to cook, all I have to do is throw everything on the sheet pan and toss it with a little olive oil, salt, pepper, and garlic powder.
The sausages we’ve been using lately are these Chicken Sausages from Bilinski’s. The company sent us some to try out, and I can honestly say that they are delicious, and absolutely something we’d purchase ourselves. In fact, we do quite frequently. ; )
They also sent us some of these plant-based sausages. We have yet to try these yet, but I’m super intrigued by them and I’ll be sure to report back once I do!
Tostadas w/ Salsa Verde Carnitas + Side Salads
We absolutely LOVE this carnitas recipe from Lillie Eats and Tells (the tostadas recipe is from the Lillie Eats & Tells Cookbook). One batch always make a bunch, so we’re usually able to get at least 2-3 meals out of it by incorporating the meat into burrito bowls, on salads, or on tostadas. Super versatile!
Ground Orange Chicken over Rice + Broccoli
Ugh, you guys. Typically I only like to share the good dinner recipes we have, but this one was just awful. Not only did it look like we were eating cat food, but the flavor was really just not there. This is what the picture looked like on Pinterest, so I really want to know just how they got theirs to look that way…
Regardless, we would not be making that one again. Blech.
Garlic Butter Shrimp with Asparagus + Cauliflower Rice
I wound up taking this picture after already having eaten a bunch of it, and I know it doesn’t look all that pretty, but the recipe was awesome so it’s definitely worth sharing. The shrimp had some awesome flavor!
Love, love, love the flavor of this recipe!! Again, I know this is one I’ve already mentioned a couple of times, but I suppose one more doesn’t hurt. ; ) We’ve made it with both ground chicken and ground pork; both are great, but the pork is my favorite. We eat enough chicken as it is, so it’s nice to switch it up!
BREAKFASTS
Voluminous Oats with Blueberries + Peanut Butter
Before kids, oatmeal was something that I most definitely took the time to make a lot more often. And as convenient as a packet of oatmeal at work is, there really is nothing like a batch of voluminous, stovetop oats. I really need to work on making these more often because they’re not only delicious, but they do an awesome job of keeping me full for a long time.
Eggs at Work
Since I tend to wait on eating breakfast until I’m at work most days, voluminous oats aren’t usually a weekday option. But I keep this microwave egg cooker in my desk at work, and will just bring a couple of eggs with me and cook them there. It’s quick and easy, and does the trick!
Or, if there are hard boiled eggs on hand in the cafeteria (another sweet snack perk we see occasionally at the office!) then I’ll have those, too.
Donuts!!
It’s no secret I love sweets, and I will forever and always love me some donuts. Just this past weekend, I finished up a spin class and then went out of my way to drive to The Crisp Cannoli, after hearing many people rave about it. I can certainly say that the donuts lived up to the hype!
And since I sampled all of them (duh), I’ll have to say that the apple fritter was definitely my favorite.
LUNCH
Not a whole lot to share here, because 9 times out of 10, you’ll typically find me eating some sort of salad.
There’s always the usual veggies, and always some sort of protein (my top choice is grilled chicken, but I’ll often use deli meat if we’re out of other protein options). Other fun toppings I switch it up with include avocado, dried cranberries, bacon, croutons, or strawberries!

I’m with you on the ground chicken! I’m cooking my way through “Cook Once Eat All Week”. We’re on week 9 and have loved every recipe – except the ground chicken week. The look, the texture… Next time I’ll use shredded chicken!

How do you get motivated to work out at home? I can get up and meet people to run early in the morning but can’t seem to get up and do a weight work out at home.
We see when you go shopping and add new items to your wardrobe but how do you decide when to ditch an article of clothing?
How do you manage to appease your sweet tooth without going overboard? I have this tendency to keep eating the sweet stuff once I start. I just tastes so good!

Are you working in “maintenance” calories right now and are you planning a cut/bulk/reverse any time?
I know macros are very specific to each person, but I’d love to hear your specific stats for overall calories and macros.

I have the Pampered Chef ceramic egg cooker and I love it. FYI, I also make oats in it too. You could pre-package oatmeal snack bags to keep in your desk at work, then make it in the egg cooker (oats, flax, dried fruit, protein powder)
All your meals looks delicious, I will have to try a couple out. .

Questions I would have for Emily on macros would be:
Do you have to constantly track food to keep macros in check? How hard is it to eat untracked and hit macros? Personally tracking too much can be triggering for me but I also know that sticking to macros/macro range gets me my best results.
Should macros change day to day based on your workouts?
For you- Are you still practicing IF?

I would love to see meals with macro information included! Also, I think another great post would be a grocery haul for the week considering that eating healthy can be costly!

Love posts like these! Random ? for Emily and you- do you chew gum/drink sparking waters like La Croix? I am trying to cut back on sweets/sugar and chew gum/drink a sparkling water to just trick my brain to thinking that is “Dessert” but I have heard that both of those things cause bloating?? Just wondering your thoughts!
