Looking for something light and springy as the temps continue to warm up? This Tomato, Corn, Avocado, and Feta Salad is where it’s at!

As you guys know, I’ve been going through all sorts of old blog posts, trying to clean them up, occasionally just deleting them (because…oh my), and re-organize things to make the whole site a little easier to navigate. That said, in the midst of some of my cleanup lately, I happened to come across a pseudo-recipe located within a post that I decided to delete (I think…now I can’t remember). But I recall this little recipe, and I’ve recreated it many times since, and it’s just too good to allow it to remain “hidden” amongst my older content.
So I’m bringing it back for you today.
The recipe is great for when all of the spring and summer produce starts coming back into season (even though, I know, we still have a little while for corn on the cob…I’m coming for you!) and it’s wicked easy to throw together.
Tomato, Corn, Avocado, and Feta Salad
Ingredients
- Romaine + spinach base
- 1 ear corn on the cob steamed in microwave
- 2 small tomatoes
- ~1/3 of an avocado
- 2-3 tbsp feta cheese
- 2 tsp olive oil + splash of balsamic vinegar
- dried basil oregano, salt, and pepper, to taste
This particular time, I topped it with some rolled up deli turkey, but some fresh grilled chicken or even salmon would really round out this dish nicely.
I’m totally wishing I had all of the ingredients in the house to make this right now (end of the week = decreasing produce selection), but I think I may have to have this on the menu at some point next week. Maybe as side salads to some nice, juicy burgers from the grill. Ohh, because I have totally been craving a good burger lately(!).

As for life in general? You haven’t been missing out on much.
This week has been a bit tough since all three of us have come down with some sort of cold over here, so we’ve all been battling that (which, of course, means that I’m hoarding tissue boxes and Lucas is sniffing/coughing/repeating since he refuses to blow his nose…). But I figure, hey, hopefully this means we’ll all be cleared up for Easter, since it’s supposed to be bee-uuu-tee-ful this weekend!
I’ve also been loving all the carbs and sweets this week, which have been making an appearance at almost every meal. Some recent captures on the iPhone…

Frosted Shredded Wheat with blueberries and almond milk
A turkey sandwich with mayo (LOVING mayo right now), provolone, lettuce, and pickles on a sandwich thin.
More Good Thins…and another box that probably only lasted about 3 servings.
Donuts. Ohhh, the donuts.
I haven’t been buying them myself, but if they’re here from my MIL, then who am I to turn them down? Can’t stop, won’t stop. <3

Pickles on sandwiches and burgers- yes! I became obsessed when I was pregnant. (Predictable, I know.) I’ve been loving roasted chick peas and jerky!
that salad looks awesome! avocado on anything is pretty much a win! and frosted shredded wheat is my favorite cereal – i like when it gets soggy! haha
I’m now craving frosted wheats! Im 8 weeks pregnant with my 3rd and all i want is bread, sugar, cereal and donuts, ugh! This post isn’t helping me much, haha!

avocado + feta is one of my favorite combos ever! Takes any sandwich and/or salad to the next level!!

That salad looks fabulous! I’m probably going to have to make that a summer staple. And I haven’t had frosted shredded wheat in ages, but I’m kind of craving it now… Hope you all get to feeling better!
