Hey guys, happy Sunday to you!!
I’m getting this post together a little late today – it’s been a busy day – but since I promised you all that the meal plan posts would be back today, I didn’t want to disappoint!
We didn’t have anything too crazy this past week, and we also had a few delicious meals courtesy of my mom (thanks, mom!). Here’s a look…
Sunday: Leftovers…BUT, if you’re looking for something awesome, check out my Lightened Up Chicken Pot Pie Soup. It’s so good!!
You can absolutely make it without the pie crusts, too…but in my opinion, that’s what makes it delicious.
Monday: Homemade Chicken Noodle Casserole (thanks, mom!)
Tuesday: Crockpot Chicken & Wild Rice Soup with biscuits on the side.
This soup had actually been in our freezer for a LONG time (like, over a year ago!!) and I came across it last week so I figured we’d give it a shot. It needed a little extra chicken broth, but it still tasted just as good as the first time we made it (YAY for meals that freeze well!).
Wednesday: Beef stir fry with peppers, onions, rice, and avocado
I didn’t really follow a recipe for this one; Jay made some sort of marinade for the beef (which was on sale for an awesome deal) and I just sauteed that up with some sliced peppers an onions, a little soy sauce…maybe some garlic? It was quick, easy, and super yummy.
Thursday: BBQ Beef Stuffed Potatoes
I came across that recipe in our latest edition of Cooking Light and it and sounded too good to pass up…and it was! The sauce it cooked in was great, and it was so easy (since even the potatoes cook right inside the crockpot, too). All we had to do was shred some cheese and slice some scallions and we were ready to go.
Friday: Homemade Mac & Cheese (courtesy of my mom) which I forgot to photograph. BUT, I have a great recipe for you to check out if you’re in the mood for some mac & cheese!
Saturday: Panera Take-Out – I ordered Broccoli Cheddar Soup + 1/2 a Chicken Frontega Sandwich.
It was good, not great. And of course, the one reason we decided to order from there was because Jay was craving soup in one of their bread bowls…and then they forgot to give us the bread bowl. Womp womppppp. : (

I haven’t really planned out our meals for the week ahead yet, but I know I really need to work on adding some more color and veggies into our dinners. We’ve been slacking!

Lately, I have been making skinnytaste’s Maple Soy Glazed Salmon and roasted brussels sprouts once a week. It’s so easy and SOOOO GOOD. She also has a turkey meatball stroganoff that’s super yummy.
Today I made howsweeteats roasted veggie lasagna and it’s insanely delicious. I can’t wait to cozy up on the couch with a piece and watch the Golden Globes red carpet ;)

Ohhhh haaaay! I had a freezer meal too this week but I forgots to thaw it and heat it when it was dinner time. My man got mcdonalds so it was a win-win! Haaaaay

We made the hearty tortellini soup from the newest cooking light last nite and it was yummy! And tonight I am doing the turkey sloppy joes… Im excited for the kale in it

I love the meal plan posts! They definitely offer up some inspiration. I’m digging that fajita/avocado combo! I’ll have to put that in my rotation next week!
