Happy Sunday to you all! Has anyone been partaking in any fun St. Patrick’s Day festivities this weekend? We’ve been low-key on the partying front, but it has been a busy weekend, for sure. I’m hoping to be able to find some time today to meal plan and grocery shop for the week ahead…otherwise, we’re wingin’ it, and that never bodes well for us!
But anywho…I’ve got a roundup of last week’s meals for ya, so let’s take a look.
Sunday: Italian Wedding Soup + Dinner Rolls
This meal was absolutely delicious and was a hit with the whole family. I’ll have more details on it Tuesday, but you can check out the recipe HERE in the meantime.
Monday: Za’atar Spiced Steaks with Rutabaga-Barberry Tabbouleh
This was another delicious meal that really took us by surprise.
Tuesday: Whole Foods dinner out! Big salad with some extra salad, garlicky green beans, and corn bread.

Wednesday: BLT Sandwiches + side salads
Thursday: Dinner at my parents’ house – we had meatloaf, scalloped potatoes, and mixed veggies. It totally brought me back to the days of living with my parents – that was a regular kinda meal for us. I think I want to try to make a meatloaf soon.
Friday: Pizza! We ended up going out for pizza, and I took no photos for ya, but if you want to make some pizza at home this week, here are a few of our favorites:
- Chicken, Tomato, & Herb White Pizza
- Deconstructed Chicken Parmesan Burger Pizza
- Hawaiian Pizza
- Summer Veggie Pizza
