Weekly Meal Plan {4/19}

Who’s got their meal plan ready for the coming week??

Unfortunately, I have nothing planned yet, so I’m hoping to hit up Pinterest and my recipe binder for some inspiration this morning. I always feel so much better when I have a plan (or at least, somewhat of a plan!). As always, here’s a look at our meals from last week…we had some delicious ones, too!

This was our first Blue Apron meal of the week (I mentioned this previously, but while I am working with Blue Apron this year, Jay and I purchased this week of meals on our own!) and it certainly did not disappoint. The lemon pepper seasoning was light and flavorful, and I loved the way it all tied in with the shrimp and kale.

Thursday: Spiced Turkey Meatball Pitas with Sugar Snap Pea & Bibb Lettuce Salad (recipe HERE)

Spiced Turkey Meatball Pitas with Sugar Snap Pea & Bibb Lettuce Salad

This was our last Blue Apron meal of the week and I was in such a rush to sit down and eat this meal (hello, starving) that I really wasn’t too concerned about how it looked. The flavors in everything – the salad, the meatballs, and even the yogurt sauce – all tied in so well together. I felt like maybe the pitas were a little big for the meatballs, but other than that I loved it, and I definitely think it’s something we could easily recreate at home again.

Friday: Pizza with peppers and onions (x2) plus a blueberry beer at my parents’ house.

Jay needed a haircut that evening, so we all headed over after work to hang out for a bit and have some pizza for dinner. It was deeeee-lish.

Saturday: Out to dinner!

    It all looks fantastic! I really need to get a jumpstart on meal planning...grad school makes it weird since my schedule is so up and down, but it'll be so helpful in a few months.

    This Korean Beef recipe is my new, "What the heck am I going to fix tonight???" recipe for dinner. It's SOOO easy and yummy. My kids love it. Two things: I would double the sauce, and it really is best to use sesame oil (I tried just olive oil one time and missed that nutty flavor).     All of your blue apron meals always look so good. I know you are loving the collaboration with them this year. My go to meal when I can't figure out what to cook is Chili. I always seem to have all the ingredients on hand.

    BLAT’s are the best! I could never turn one down! I am not usually a steak person, but that sounds so good right now! Is that spinach creamed?
