Weekly Meal Plan {4/4} + A Giveaway

Well hey there, fancy seeing you guys on a Saturday!

Since tomorrow is Easter, and I’m sure many of us will be out and about, I figured I’d go ahead share (most of) our meal plan from last week today, rather than tomorrow. I actually just finished up an Insanity Max: 30 video that kicked. my. butt., so hopefully by the time I’m finished typing this up, I’ll be cooled off enough to shower and hit up the grocery store for next week’s loot.

But for now, here’s a look at what we had this past week. FYI: we were diggin’ the french fries.

Sunday: BLT’s on sourdough bread with garlic mayo + french fries

The garlic mayo we used (and actually, have been using for a few weeks now), is Just Mayo from Hampton Creek. The company recently sent me all four of their flavors to try, which are the garlic, regular, chipotle, and sriracha.

I will tell you guys that we are thoroughly impressed with this mayo, not just for its flavor (the chipotle has some serious kick to it!), but because the ingredients list is pretty awesome, too. There’s actually no eggs in it at all!

And coming from someone who has a serious thing for mayo, that should tell you something. This stuff is GOOD.

In addition to the mayo, Hampton Creek also makes Just Cookies (that are dairy free and egg free). And, umm, they make Just Chocolate Chip Cookie Dough, which is eggless…

This was the pesto salmon from Bumble Bee Superfresh, and it’s definitely a favorite of mine. Quick, convenient, and delicious.

Thursday: Healthified Crockpot Beef & Broccoli served over jasmine rice

We actually remembered this recipe having a lot more flavor, so I’m not sure if we missed something this time around or not?! It was still good, just not what we were expecting.

Saturday: Tonight I’m planning on roasting a turkey, with some roasted red potatoes and asparagus. I can’t wait!

    I just saw the line of Mayo at Target last night! I didn't realize there was a GARLIC flavor, otherwise I totally would have bought some! I have a serious thing for garlic aioli.....I imagine the garlic mayo is just as good. Yum!

    Mayo sounds awesome. I make my own once a week...250ml light olive oil, 1 large organic egg...season with salt, pepper, a little lemon juice...you just make it in a jug with stick blender!

    I've seen that mayo at the grocery store, but I wasn't sure if it was regular mayo, or something fancy! (Clearly I didn't look too close) Totally picking it up next time I see it. Side note. I totally ate raw cookie dough last night while making my husband some cookies. I mean, cookie dough tastes WAY better raw anyway than cooked haha. I can't believe there's a dairy/egg free version I can just EAT. My mouth is salivating.

    OMG, the cookie dough looks outrageous! The chicken dish looks great too. I have to ask how to prepare your fries. Deep fry, oven, drive thru window (know a family member who did that a few times)? Have a wonderful Easter.

    I would loveee to get my hands on the chipotle mayo (so good when I've had it at restaurants with sweet potato fries), but I think my husband would instead go for the sriracha!

    Garlic mayo on a BLT sounds amazing, or the chipotle mayo on a southwest-themed wrap...I'm thinking turkey, pepper jack cheese, lettuce tomatoes and avocado? Yum!

    Did someone say Mayo.....be great mixed in tuna or chicken for lunch wraps. I made a chicken and rice casserole this week that called for mayo and this would have given it the something special it was missing!!!!!

    They all sound good depending on what I would make. I think your BLT sounds amazing so garlic mayo is which one I would like asap. Chipotle mayo would have been amazing with our jalapeño cheddar turkey burgers last night!
