Weekly Meal Plan {5/31}

If you can even call it that, haha!

Needless to say, moving out of a house leaves your food situation pretty…bare. And sad. I didn’t take pictures everyday of what we ate, and honestly, I don’t even remember what we ate for the nights that weren’t photographed. So I’ll just go ahead and share what I did snap pics of, and then I’ll throw in some fun ideas for things I’m hoping to get on my upcoming meal plans. Because, really, I am SO ready to get back into regular meal planning and good, healthy meals!

Sunday: Memorial Day Party…lots of good food and snacks were had

Monday: Dinner at my parents’ house, complete with grilled steak, corn on the cob, mac salad, and noodles.

Tuesday: I have no idea what we ate this evening…but I will say that with my lack of veggie intake lately, I have really been dying for some good, quality ones. So that said, I’m thinking I may wind up having to do something like my Healthy Taco Salads with Creamy Cilantro Lime Dressing or Stuffed Spaghetti Squash. Or THIS…

Wednesday: The Best Ever Chicken Salad on King’s Hawaiian dinner rolls. SO. GOOD.

Thursday: (I’m suddenly realizing I took more pics than I thought this week!) Homemade spaghetti and meatballs with steamed broccoli

This was our first meal over at Kanika and Shaheen’s house…we’ve arrived! Smile

Friday: We ordered takeout (after a long, long day of finalizing the moving process) but I can’t seem to find the picture. Instead, I will let you know that I’ve seriously got my eye on this amazing looking Chicken Enchilada Casserole. It looks like it needs to be in front of me, like, right now.

Saturday: Cheeseburger with corn on the cob and THE BEST (seriously, not joking) salad I’ve had in a LONG time.

The veggies were all so fresh, and the dressing was a homemade mix of lemon, garlic, olive oil, and mint. Ohmygodddd I need this like, every day.

Alright guys, that’s all I’ve got for ya today! I’ll be back tomorrow to fill you in on our weekend, the final moving stuff, and some new house updates. Have a great Sunday, everyone! Smile
