WIAW: Spacing Things Out

I’m jumping back in on the WIAW bandwagon this week!

It’s no secret that these days, my appetite is pretty large. I’m usually eating just about all day long, but as I mentioned yesterday, I’ve been filling up a lot quicker than I’m used to. So yesterday, rather than sit down to big meals (not that I do that all the time anyways, but still…) I wound up spacing a lot of meals out throughout the day into smaller snacks, and it worked perfectly.

So here’s a look at what I ate…on Tuesday. Winking smile


Cinnamon raisin swirl bread with peanut butter & banana slices + coffee


I’ve been eyeballing the Pepperidge Farm whole wheat cinnamon raisin swirl bread at the grocery store for weeks now, and this past week I noticed that not only did I have a coupon, but they were also BOGO at Price Chopper.

The bread is SO good that it doesn’t even need to be toasted. I’ve had it the past two mornings (three, if we’re counting today) and it is just totally hittin’ the spot.


Mid-morning, I also snacked on the other half of my banana but that went un-photographed.

Lunch/Snacks – Parts 1, 2, 3, and 4

My day yesterday was pretty crazy, and lunch was eaten in quite a few different phases. Around 1:00, I grabbed a small cup (about three bites worth) of some potato salad that was leftover from a sales luncheon. It was probably the best potato salad I’ve had in years…no joke.


A little while later, I ate part one of lunch – a banana Chobani with strawberries, blueberries, Quaker Oatmeal Squares, and Multigrain Cheerios.


About an hour later, I snacked on some baby carrots and grape tomatoes with sundried tomato hummus.


Around 4:00pm, I needed something yet again, so I grabbed a Blueberry Bliss Luna bar from my desk drawer stash. I absolutely LOVE the blueberry flavor Luna bars – probably my favorite.


Pre-Dinner Snack

I couldn’t help it…


We didn’t eat dinner until a little after 7:00pm, so while we started getting things prepped, I wound up snacking on a garlic knot leftover from Monday night. Heated up, I swear it was even better this time around.


About a half hour later, dinner was finally served. And ohhhhh baby, was it good!


I made a couple of simple side salads to accompany the main star of the evening…grilled buffalo chicken sandwiches.


I actually made this recipe back in May of 2011 (was totally shocked when I realized it was almost two years ago?!) after finding it in one of Jay’s issues of Men’s Health. The recipe wasn’t posted online when I originally made them, but it is now (here’s the recipe). We followed it exactly, but I also added some sliced avocado to my sandwich just to jazz it up a bit more. So spicy…soooo good.


Jay and I each enjoyed a special cupcake shortly after dinner.


And if you ask me, any night that ends with cupcakes is a good night. Winking smile

Yoga Challenge, Week 3

Good morning, friends! How was the weekend? Not too many recaps to catch up on over here…

I would have actually had another recap for you from last night but, alas, I left my camera over at my parents’ house. Of course. It was a fun evening though, despite the awful overtime loss of my Jets (nope, don’t wanna talk about it). We had plenty of good food (mostly the usual spread), and in addition to getting to hang out with the fam, we also got to spend the evening with Seth and Nicole…who I hadn’t seen since their wedding. So much fun!


This morning, I woke up with a craving for cereal…I don’t think I could tell you the last time I was actually craving cereal. Usually I wind up eating it because it’s quick and easy or because there’s nothing else in the house. While the latter was true today, it was definitely still the breakfast of choice.


Today’s bowl included a mix of Multi-Grain Cheerios and Cascadian Farms Ancient Grains Granola, bananas, chia seeds, and unsweetened almond milk.


Super light and yummy.


Now. Since it’s Monday, you know what that means…

October Yoga Challenge – Week 3 Recap

The third week of the October Yoga Challenge has officially passed. Crazy talk, I’ll tell ya. Luckily, I am very happy to report that I rocked it this week on my challenge!

My Challenge: Do 3 yoga sessions for the week

Actual: 3 yoga sessions complete!

  • Yoga on Demand video – 25 minutes
  • Yoga Bootcamp: Core Strength DVD – 40 minutes
  • 10lb. Slimdown Yoga DVD – 20 minutes

After doing so horribly the week before, I was determined to meet my challenge this week. My first session was was a random one that I found On Demand on Monday. It was pretty good, and I’d say that I’d probably do it again. The second session I completed was the core strength DVD on Wednesday. I can honestly tell you that that DVD kicked my butt. WOW. The last session I did was on Friday, which combined a 30-minute run/walk on the treadmill with the 20 minute yoga session. It was just a quick one, but it felt great to stretch after the cardio.

Unfortunately, I still haven’t made it out to the studio for a class with my Groupon yet, so maybe we’ll give that another try this week. Either way, I’m feeling much better about the challenge this week, and am once again looking forward to another (hopefully!) successful week. I’m actually thinking a session will be in the cards for later today, since my legs are wicked sore after a short run/walk + some lunges and squats yesterday. Oooof.

Ready For The Fourth

Do you guys want to know something I am WICKED excited about this month? I mean, I don’t even know if words can describe it (okay, maybe I’m being a bit dramatic there)…

You’ve followed my excitement over the second AND third sequels, and now, I am ready for the fourth!


It’s BACK, baby!

Seriously, my love for scary movies is unreal. I love it all. So when I found out that yet another Paranormal Activity movie was coming out this month, I might have peed a little.

It’s literally like pulling teeth to try to get Jay to come with me to any scary movie (or rent them from Redbox), but I’m not worried because if he doesn’t pull through for me, I’ve always got my good friend, Joey.

He’s always up for a scary movie! So, come October 19th? I bet you’ll be able to guess where I’ll be. Winking smile


Alright, now let’s get down to brass tacks (Homestar Runner, anyone? My brother and I used to laugh until we cried watching that cartoon!).

Seeing as though I had lots of my breakfast favorites for dinner last night, I decided to have something slightly different for today’s breakfast.


Hey, ya can’t go wrong with a cereal combo! Multigrain Cheerios, Cascadian Farms Ancient Grains granola, bananas, unsweetened vanilla almond milk, and chia seeds.


Delicious, indeed.


Once this settles, it’s time to get my yoga on. And speaking of which…

I know I originally said that we’d have our link-ups/check ins on Friday, but the more I thought about it, I think I’m going to wait to have our check in until next Monday. I know that I’m planning on doing at least one session over the weekend anyways, so this will give all of us a bit more time to catch up with our goals.

Crunch, Crunch, Crunch

It’s so nice to know I’m not the only one with a killer sweet tooth after dinner!! I loved reading all of your comments earlier and wish you all the best on your goals. I am still feeling pretty good about my decision to go the next 40 days without sweets after dinner…

We’ll see what I say a couple days from now.

On to today!!


I’m sure there’s no surprise here, but I’ve got a whole loaf of Banana Raisin Pumpkin Bread to be eaten, folks!


So I went for it. But this time I got smart and added a little PB to both slices. Mmmm mmmm, GOOD. Smile On the side, I had a little fuzzy peach.


And, of course, some coffee to go!



To some of you, my lunch may look a little lame, but I’m telling you…sometimes cereal for lunch just totally hits the spot! Who’s with me???


Today included a mix of the usuals: Kashi Go Lean Crisp, Quaker Oatmeal Squares, Multigrain Cheerios, vanilla almond milk, plus strawberries and blueberries.


It was exactly what I needed! Smile


As soon as I got home from work, I prepped a package of chicken tenders that we bought over the weekend and let them marinate for almost two hours before cooking them up and adding them to some big ‘ol salads!


My salad included a mix of romaine, spinach, cukes, cherry tomatoes, onion, baby carrots, broccoli, red pepper, dried cranberries, and 3 chicken tenders. I drizzled my salad with the same dressing I used to marinate the chicken, Kraft Roasted Red Pepper Italian with Parmesan. It’s another one of my favorites!


On the side, Jay and I finished up the last of our beer bread. I toasted it in the toaster oven, which made it pretty difficult to bite into without obliterating the roof of my mouth.


Jay and I laughed at the fact that we both felt like all we could hear throughout our entire dinner was “CRUNCH, CRUNCH, CRUNCH!” Talk about a noisy meal! I mean really, you’d think I’d learnConfused smile

Luckily, adding a little jelly to the top helped soften things up a bit.

I can already sense my sweet tooth starting to perk up, and it certianly doesn’t help that I’m finishing up a batch of chocolate chip cookie cups for my mother-in-law.

I’m hoping a warm mug of White Chocolate Kisses tea will keep any temptations subsided.

That, and the fact that I get to laugh all evening with my favorite Wednesday night sitcoms!! Open-mouthed smile

Did I Just Hear…?

Soooo, it’s Valentine’s Day, and even though hubby and I don’t celebrate with overpriced flowers and chocolates, we do still have a special home cooked dinner planned for this evening.

That being said, my special Valentine deserves all of my attention tonight, so I’m going to give you all a quick recap of today’s eats. I mean, I can’t totally leave you all hangin’ – I think of all of YOU as my valentines, too!


Quaker Oatmeal Squares + Multigrain Cheerios + banana slices + vanilla almond milk

A veggie-licious salad (aka, whatever we had left in the fridge…today was grocery day)


In here we got some romaine, broccoli, roasted red peppers, and a crumbled up Morningstar Farms veggie burger (which I think must have had carrots in it…it left my tummy grumblin…)


Topped with a dollop of roasted red pepper hommus – a perfect substitute for salad dressing! It makes everything so nice and creamy. Smile


Some 3:00 snackage. By the way…this Black Cherry Chobani is killerrrrrr!


I’m so glad I had this to help keep me from indulging in the enormous amount of ice cream sundaes that were happening in my classroom for Valentine’s Day. I am happy to say that I was able to resist 100%. Now that’s a victory if I do say so myself! Open-mouthed smile

But now if you’ll excuse me, I’m pretty sure I just heard a champagne bottle pop…


Oh boy, would you look at that…I sure did hear some bubbly!

White Chocolate Oreo Cream Squares

White Chocolate Oreo Cream Squares! (see recipe below)


Happy Saturday! How’s everyone’s day starting off?

I’m currently sitting, enjoying a fantastic cereal combo bowl that I’m sure would rock anyone’s socks…


Quaker Oatmeal Squares + Kashi Go Lean Crisp + Multigrain Cheerios + vanilla almond milk.




But while I was sitting here, it occurred to me that I’ve been holding something back from you all.

No, it’s not some dirty little secret…

But it IS a recipe. And if you’re a fellow Oreo Lover as I am, I’m thinking you’re going to want to check this out.

So let’s all get serious. The best part of an Oreo is by far the cream filling.

(Trans fats, what??)

So when I took my first bite and got the taste sensation of a big hunka cream filling, I may have lost it a little.

And to make the recipe even more exciting? There’s only 5 ingredients. Super easy!

First, you line your 8×8 baking pan with some waxed paper (thoroughly coated with non-stick cooking spray) and cover the bottom with half of your broken Oreo pieces.


Next, get together some more of your ingredients. I’d recommend going with the fat free sweetened condensed milk because, well, let’s face it: the recipe isn’t that “stellar” in the nutrition department, and since you can’t even taste the difference, just do it. It does make a big difference in the calorie/fat department. Smile


In a small saucepan, over low heat, melt together a little butter, your sweetened condensed milk,


and some white chocolate chips.


Stir stir stir!


Once you’ve gotten all of your ingredients to a melted consistency, remove the pan from heat and add 1 tsp of vanilla extract.


Everything should look nice and smooth (and totally ready to drink from a cup…)


But don’t do that. You’ll regret it. Winking smile

Instead, pour the melted white chocolate mixture over your broken Oreo pieces.



Then go ahead and finish off this bad boy by adding the remaining broken Oreo pieces on top.


Refrigerate at least one hour, and before you know it, you’ve got yourself an amazing batch of White Chocolate Oreo Cream Squares.



What’s nice about these, is that you can cut them into small pieces without feeling deprived. That way, your goodies last even longer. Winking smile


Although, with two Oreo Lovers living under the same roof, it didn’t necessarily mean that these squares lasted for long.


They’re irresistible.

Chocolate Chip Cookie Cups with Almond Buttercream Frosting

You’re pretty intrigued by that title, right? Don’t worry…it’s down below!

But first…I think it’s time to get new running sneakers.

I woke up feeling rather energetic and ready for a run, so I dominated the treadmill with a 46 minute, 5 mile run. WOOT WOOT! However, my feet have been extremely sore since finishing the run. After going through my old posts, I realized that the last time I bought myself a new pair of running shoes was April 25th. Oops. Disappointed smile

I really do like the way that these Asics Gel-1140 have held up; they have great arch support and lots of soft cushioning around the sole of the shoe. However, I’m not opposed to trying anything new…SO…

Any recommendations on running shoes out there? I tend to run on the balls of my feet, so I need something that will support that…

After running, I was in the mood for nothing but cereal so I prepped myself a quick bowl:


Multigrain Cheerios + Quaker Oatmeal Squares with vanilla almond milk. It tasted so good, I had to go back for a second bowl of Cheerios. I have a feeling these aren’t going to be around too long…



After eating, I got to work on finishing up the rest of my game-day desserts:


Of COURSE I had to go green…gotta represent my Jets today!!


These are so simple to make, yet so amazingly delicious! It’s just a basic chocolate chip cookie recipe, cooked inside a mini muffin tin.



Then you hollow out the centers just a bit before cooking to make room for the frosting. Mmmmm…nothing beats homemade frosting, am I right??


Instead of making a regular vanilla buttercream, I did my favorite switch-a-roo and substituted to make almond buttercream. If you’ve never tried it, please do. It will change your life.




After making a good amount of the cookie cups, I still had some dough leftover, so I got a little creative…

Remember those cookies you saw last night? Well they aren’t just any chocolate chip cookie

They’re candy-bar-filled chocolate chip cookies! Surprised smile


Specifically, Milky-Way filled chocolate chip cookies. After seeing the idea over on Picky Palate’s site, I became a little obsessed.


It’s a good thing I only made 8 of these cookies…since there’s only 2 left!

It’s almost GAME TIME…we’ll be heading out shortly to go back over to my parents’ house for the big Jets Game. Hopefully it’s as good as last week!!! Open-mouthed smile

The Best I’ve Ever Had

Hey everyone! How’s your Saturday going? Smile

I’ve had myself a nice little Saturday, which started off with a fun Starbucks date!

Earlier in the week, I made plans to meet up with my friend, Heather. Unfortunately with our busy schedules, we don’t get to see each other nearly as often as we’d like. So we spent a couple hours chatting away and catching up on the past couple months.

While we sat and chatted, I sipped on an exceptionally delicious Skinny Caramel Macchiato,


and also ordered the Egg White, Spinach, & Feta Wrap.


It was good, but not great. The egg whites almost tasted a little spongy today?


We had a great time eating, drinking, and chatting away. Hopefully I’ll get to see her again sooner rather than later! Winking smile


Throughout the afternoon, I had some work to do around the house and never really sat down to an actual lunch. I enjoyed a couple snacks, one of which being this fantastic yogurt mess.


A vanilla flavored Chobani, mixed with some raisins, half a banana, Multigrain Cheerios, and some cinnamon. Suuuuper tasty.


When it came time for dinner, hubby and I both knew that no cooking was going to be taking place today. Even though we finally do have countertops and a working stove, we are still without a sink, and have our pots and pans scattered randomly throughout the house.

Soooo, we picked up the phone and ordered some delivery. Tssk tssk, I know…eating two meals out in one day. Embarrassed smile

But hey, at least I incorporated some extra veggies-from-home into my meal, right??


We ordered from one of the local Italian restaurants in our neighborhood, Testo’s. This place is seriously becoming a favorite of ours. Everything we get from here is amaze-balls….and tonight was no exception!

Look at all that food! Surprised smile Ok, here’s the lowdown…


Jay and I got an order of garlic bread to share. I easily finished off my half. Easily.


After getting word that Testo’s makes the “best meatballs on the planet,” I decided to give them a go tonight.

Let me first say this: Mom, I love you and your meatballs to death

But these meatballs were most definitely the best meatballs I’ve ever had. WOW! Jay and I each had one.


Since I knew we were ordering everything else, plus the veggies, I just decided to order the appetizer-sized Pasta Fagioli. Even ordering the smaller size, I still have half left to enjoy for tomorrow’s lunch. Smile


I actually probably could have finished off the rest of the pasta fagioli no prob; however, I didn’t want to make myself uncomfortable, aaaaaand I have to make sure to save room for a little dessert later on…


Oh yes, some baking was happenin’ today!

I’ll share the deets tomorrow, but for now, hubby and I are off to go watch a movie. We picked up The Social Network earlier, which I’ve been dying to see since it came out. Hopefully it lives up to my expectations!

Let me tell you…last night’s massage was wonderful! I felt so relaxed and rejuvenated afterward. I had actually planned on coming home and heading to bed shortly after, however that darn Jersey Shore sucked me in and I ended up watching that until 11pm. Did anyone else watch last night??


Pauly D and Vinny seriously crack me up. Hilarious!! Open-mouthed smile

So it’s no surprise that I almost didn’t hear my phone ringing bright and early at 5:30 this morning…

Another 2 Hour Delay for school! I really love the fact that I only worked one full day this entire week. I love that a lot. But I am pretty over all this snow…it’s really starting to pile up out there!


So I slept in for a little bit and then used my extra time for a kick-butt workout: Rock Hard Total Body Workout from Exercise on Demand. It’d been a while since I’d done this one…and I could easily tell. WOW!


I also took advantage of my extra morning time to prep some more PB&J oats.


Since I ran out of cookies to top it with this time, I subbed in some granola instead. Still just as tasty…and possibly a little healthier. Winking smile


They’re just so darn tasty!!


On my way into work, I stopped for a big ‘ol coffee from DD’s, BUT…

I jazzed it up a bit by adding in a packet of sugar-free hot cocoa mix. I used to do this quite often, and I don’t know why I ever stopped. It’s amazing. You must try it. Like, now. Winking smile

The only difference today included an amazing butterscotch rice krispie treat that one of my students brought in for her birthday. Soooo good.

Tonight Jay and I have a party to attend for his work, which actually happens to be at a hotel right down the road from our house. I’m really looking forward to tonight, since most of his co-workers are absolutely hilarious! It’s sure to be a good time! Smile

You Know You’re Sick When…

Darn this darn cold! Annoyed 

Right now, my nose is looking and feeling a whole lot like this:


I know, I know…it’s just a cold. But I just needed to take my five seconds to complain about it.

Ok, I’m good. Winking smile

So maybe I’ll blame it on the cold, but I actually did not take one photo of food yesterday. You really wouldn’t have been interested in anything I ate anyways, since I tend to make quite boring food choices when I’m not feeling well (helloooo abundance of Kashi crackers!).

BUT, I will fill ya’ll in on a couple highlights of my day, since I’m fun like that…

  • Started off my work day with a 2-Hour Delay…which only made me realize that I could really get used to starting every day at 10:30.
  • I used a whole lot of tissues (hence the photo above)
  • Was going to take a rest day from exercise, but decided a little yoga wouldn’t hurt – I did some Jillian Michael’s Yoga Meltdown, and I surely didn’t regret it.
  • Enjoyed reading all of your entries into my GiveawayHave you entered yet???
  • Jay came home from work to tell me that we had plans to meet up with our friends Josh and Erika for dinner. Luckily, my nose wasn’t dependent on tissues at this point…
  • We spent 3 hours chatting at dinner! We went to a local Italian restaurant, and believe it or not, I ordered minestrone soup and salad. At an Italian restaurant…I’m most definitely sick.
  • However, I then proceeded to dominate the enormous piece of carrot cake that Jay and I got to share. That cake made all seem right in the world. Smile
  • I did a little more organizing in the kitchen(!!!)…


  • I took a whole lot of this…


And…Ohhhh, what’s that you say?? Did you happen to notice something different?

Yes, yes you did!

We got our countertops in!!!!!!!


I’m only giving you all a sneak peek for now though. Winking smile

As soon as we get the last few things in (aka, a SINK!) then I’ll be sure to do the “Big Reveal.” I’m so excited though…it’s REALLY coming along!!

Aaaaand now I’m off to work…unfortunately not at 10:30.
