Well, I think we’re slowly but surely on the mend over here! I’ve been able to spend the majority of the last 24 hours unattached from my tissue box and Lucas has finally started acting more like himself. Thank goodness! I even managed to get up for a quick workout this morning and it felt so good move a bit (taking it easy on the cardio since my asthma is still recovering, too).
So since I don’t really blog as much about all of my food/meals these days as I used to, that means there are a number of things that usually wind up going unmentioned. Sometimes this includes some pretty lame ones that you’re really not missing out on, but other times I come across a few gems that are definitely worth sharing. So today, I want to share some recent recipe “wins” over here!
I made this recipe with Kanika when we were over visiting them a couple of weekends ago and was lucky enough to take half the loaf home. This bread was so, SO good you guys. And it paired amazingly with peanut butter…in case you needed any other convincing to make it.
Black Bean and Spinach Enchiladas
I’ve made these enchiladas before and was just recently reminded of them again. They’re seriously SO good and you can easily add in some chicken if you wanted a little extra protein.
Single-Serve Deep Dish Chocolate Chip Cookies
This is a recipe I’ve had pinned for a LONG time now, and every once in a while, Jay and I will be like, ummm yeah, we need some deep dish microwave cookies. They’re good plain, but they’re REALLY good with a small scoop of vanilla ice cream on top. For when the cookie craving strikes and there aren’t any already baked, these totally do the trick.
The link above is actually tied to the post where the above photo came from, but we actually haven’t tried that particular recipe. Last night, we made this recipe which was alright, but a bit on the salty side (plus, I don’t always love using a bunch of the canned condensed soups). However, it was our first time cooking london broil in the slow cooker and I can tell you we’ll absolutely be doing it again. So quick and convenient, and the meat literally just falls apart. Perfect for weeknights!
I also currently have a boatload of recipes on my Dinner Ideas board that I’m hoping to try soon.
You know, once I actually get back to planning meals again (it’s a “once in a blue moon” thing lately).

Ok those single Serve cookies – happening tonight!
I don’t cook much, but a couple of months ago I looked up a recipe for Mexican Lasagna because I had leftover small corn tortilla shells to use up. Since then I make it every week or two. Soooo good and easy enough that I can do it while my toddler eats!

I am in the same boat, I have pinned a whole lot of recipes I want to cook up for dinner soon! Thanksgiving dishes are also on my radar.
I’ve made those single-serve deep dish cookies, they’re amazing and so perfect for when you only need something a little sweet and don’t want to bake a whole batch of cookies because I’d end up eating a heck of a lot more that way!! I sometimes put a scoop of vanilla ice-cream on top, which just makes it even better ;)

1) Cheap Korean Beef – its a go-to for me for quick easy and makes great leftovers for lunch. My husband wasn’t thrilled with all of the sugar, but the second time I made it I used coconut sugar, and tamarai or coconut aminos instead of the soy sauce to make it paleo. I think you will like it.
2) Iowa Girl – Carmelized Sweet Potato Kale Fried Wile Rice – I made this dish Sunday! It was relatively quick and easy and i served it with jalepeno chicken sausage but you could grill chicken breasts. I used low sodium chicken broth, but i felt it needed a bit more salt, so please note that.

Oh I loooove enchiladas! I pin a ton of things onto my food board and then always forget to scroll down and try things. I end up just making the first item on the board!
I haven’t tried making anything new in a while, outside of some ground turkey stuffed peppers in the crockpot. I need to branch out, but I have a good rotation of foods I’m so happy with. Do you need a lot of variety or are you okay with repeating? I’m a huge repeater! Glad you’re feeling better!
Haha, totally depends…I’ll go through phases where I’m happy with the same thing over and over. Other times, I want something new all the time!
I made these copycat Starbucks toffee bars recently that were SO good! I froze them but fortunately/unfortunately they taste awesome even straight out of the freezer.

Apparently Starbucks used to sell toffee blondies just like this but they stopped? These are so good though- they’re loaded with chocolate chips, white chocolate, and pieces of Heath bar!
I doubled the recipe and baked them in a 13×9 pan, which definitely turned out to be the right decision :)

That chocolate pumpkin bread looks so good! I actually tried the enchilada quinoa casserole from Pinterest recently, I liked it! Definitely added a little more cheese on top than was called for though :)
