Talk about a fantastic weekend!
The weekend got to be an extra day long, thanks to my friend Eileen’s wedding that was on Friday (I’ll tell ya, that totally threw me off all weekend, but in a good way!).
I was so excited to be a part of the festivities and, honestly, there couldn’t have been someone more deserving of an absolutely perfect day.
A HUGE congratulations to my college roomie, Eileen, and her new hubby, Dan!

Bridesmaids, watch out!
After a short and cute ceremony, the reception began and I finally got the chance to meet up with this stud.
Since the bridal party did pictures before the ceremony, that meant that we were able to take part in the cocktail hour, so we all hung out, scarfed down food, and had a few beers.
Of course, there was fun on the dance floor as the night went on!
And plenty of delicious food that I was too hungry to take any other photos of.
(sorry for the funky lighting…it was a total dance party up in there with all sorts of changing colored lights!)
It’s kinda crazy to think that here we are, 8 years after college, and all five of us are now married, three of us with kiddos. Out of our fivesome, first it was me, then it was Joelle, then it was Rachel, then Kathryn, and now Eileen.
It was bittersweet to know that that was the last big “hurrah,” but I guess that’s what happens when we all grow up. I love these girls and so wish I was able to get to see them more often. College BFF’s! <3

Saturday morning, Jay and I woke up at the amazing hour of 8:30am. Ahhh yes…it is quite a treat when Lucas stays overnight with his grandma and papa! We eventually mosied on out of bed, had some donuts, and sipped on our coffee while watching the news.
This never happens. It was fabulous.
The rest of Saturday wasn’t anything too crazy. We picked Lucas up in the early afternoon then hung around the house the rest of the day. We did have a delicious tilapia dish for dinner that really knocked our socks off.
I ordered us another week of Blue Apron meals (*This was not a part of my original collaboration with the company. I decided to purchase the meals on my own because we were that impressed with them.), and this was the first one we’ve had so far. We were all quite impressed with everything, minus the black beets. Jay and I didn’t care too much for them.

On Sunday, we all got up and out the door shortly after breakfast to bring Lucas for his first trip to the apple orchard.
For anyone that is even slightly close to the Kinderhook area, you absolutely MUST go check out Samascott Orchards. I decided we should check it out at the recommendation from one of my coworkers, and I’m so glad that we did. It was about a 35 minute drive for us, but totally worth it.
Not only is the place HUGE, but it’s also not nearly as packed as some of the other popular ones in our area. Plus, the amount of items that they have available to pick far surpasses anywhere else I’ve seen near us.
So we decided to check out the pumpkins first. Lucas helped us pick out a couple that he liked and we wound up coming home with four. Like we really needed four pumpkins, but whatever.
He was a super big helper, obviously.

Next, we hit up the apple trees, and I’m pretty sure this is where Lucas was most excited to be.
Maybe?
We loaded up on a bunch of Macintosh apples, since they’re my favorite to bake with, and of course, we also had to snack on a couple while we were out there.
We also picked up some Macouns and Golden Delicious, since those are my absolute favorite.
And, eventually, we finally found more people amongst the trees so we could ask someone to take a family photo for us (for the longest time, it was just us!).
So maybe I know nothing, but I was shocked to see that they still had raspberries to pick. I had no idea they were harvested so late in the season?
But the bushes were plentiful, and wound picking about a pound of them to bring home with our apples and pumpkins.
Honestly, I couldn’t pick them fast enough to keep up with this guy. He was obsessed with the raspberries!
Of course, you can’t visit an apple orchard without picking up some cider and cider donuts…
Mmmm, mmm. Deeeee-lish.
