I feel like it’s been a LONG time since I really nailed it with a meal plan. But this past week, I had everything planned and purchased ahead of time, so it was smooth sailing come evening time. I feel like we had a pretty good mix of stuff, too, so here’s a look at what we ate!
Sunday: Random steak “fajitas” made with leftover steak, sautéed peppers and onions, homemade guacamole, and feta cheese – all on whole wheat tortillas, which were cut because they’re rather large.
Monday: Apple ‘n’ Bacon Mac & Cheese
Tuesday: Simple and Tasty Beef Stew (seriously, SO easy, and SO good!) with crescent rolls on the side. *Side note: the original recipe calls for making it in the oven, but I put mine in the slow cooker on low for about 6 hours and it was PERFECTION.
Wednesday: Homemade Chicken Parm Meatball Subs with roasted asparagus
I made another batch of my Healthy Chicken Parmesan Burgers into meatballs and stuffed them in some hoagie rolls, topped with sauce and cheese, and let them broil until melted. SO easy and we both loved them.
Thursday: Chicken, Bacon, Avocado, Ranch salads with homemade garlic bread on the side (made with extra rolls from Wednesday’s dinner)
Friday: Pizza with Joe & Kate (no photos of the pizza, but it was the same pizza we got HERE!)
Saturday: Crockpot Stuffed Pepper Soup
I seriously just love that recipe. SO easy and it makes a ton, so lots of leftovers to either freeze or have for lunches during the week!
So there’s a look at last week – unfortunately, I’m not feeling quite as prepared for this coming week, but we’ll see what I can manage to pull together today.

How long did you cook the meatballs? I couldn’t see the adjustment on the original recipe for burgers – thank you!!
About 20 mins at 350 degrees! I always use a meat thermometer to make sure they’re somewhere between 165-170 degrees F.
I really need to get better about meal planning for the week! Looks GREAT!
This week was busy and it turned into a lot of leftover remakes which is good just not what I had originally planned.
All those dinners look so good! Stuffed pepper soup sounds delicious! Definitely need to make that next week :)
That soup would be amazing over a big pile of sweet potato mash or heated up in a skillet with some eggs cracked in to poach! Looks yummy!
Uhh, those homemade chicken farm meatball subs… that’s genius! And it seems really simple and easy. I could accomplish something similar in the kitchen of my residence hall. I’m off to research.
Im not sure how you can think that your meal plan is healthy! What you are doing is giving people the wrong idea of what is heatlhy and what is not. It is false and you should be embarrased.
A little dramatic are we? I see a balanced meal plan with some indulgence and healthy fats, protein, carbs and veggies. Just because her meal plan doesn’t meet your “standards” of health doesn’t give you the right to berate her. Get a life
Actually, I’m not the slightest bit embarrassed, Miranda, but I would say that your comment was a bit harsh, no? I’ve never claimed that my meal plans are “healthy,” but it sounds like they don’t suit you or what your standards of health are. That said, it seems to me like this may not be the best place for you to read, and that’s okay.

Your blog header says “Living healthy is easy”? and you claim it is about healthy food. Sorry if i came across harsh, but i think that you are sending the wrong message that your blog is healthy and if you eat foods like that its ok.
Its not about my standards of healthy food but setting a good example of what health food is as per the national guidelines. I showed everyone in my agency your blog and they were all shocked as to how unhealthy your meals were. Maybe some of these recipes on occasion, but your weekly meal plan was lacking (to say the least) in important nutritious ingredients.
Wow, well thanks for sharing the blog with everyone in your agency! As a reminder, this is one week of meals out of the remaining 51 in a year. We can’t all be the definition of healthy (whatever that may be) all the time :)
Straight from another working mother to a young child, I think your meal plan looks great! Knowing your history, I love that you’ve included a mix of healthy AND indulgent foods. I see veggies, protein, carbs (they’re not the devil!) and fats–all things our bodies NEED. No where does your blog imply it is strictly a “health food” blog.
Just felt the need to reply to that one dramatic commenter–maybe this conversation is a catalyst for a blog post on what “healthy” means to you? :-)
I wish I would get on the meal planning train, but my make-whatever-inspires-me method has won me over !
