Weekly Meal Plan {10/25}

Happy Sunday! Happy meal plan day!

As usual, here’s a look at our meals from this past week. We didn’t do a very good job on the veggie front, and we were apparently liking Italian, but hey…ah well. Veggies were had at lunch (for me, at least) so they were still there…a little. I think we’ll have them back in the game this coming week though!

Sunday: Grilled Chicken, Bacon, Ranch panini sandwiches with tomato

Monday: One Pot Burrito Bowls with avocado and sour cream (an old favorite!)

Tuesday: Grilled Cheese with Homemade Tomato Soup

This was my first time actually making homemade tomato soup and not only was it super easy, but it was so good! And as a side note, the bread we used for our paninis and grilled cheese was PERFECT. I found a half loaf of panini bread in the bakery section of Hannaford and it was perfect for us. Eight slices, exactly enough to make four sandwiches, and none went to waste!

Wednesday: Skinny Veggie Crockpot Lasagna

We had my parents over for dinner and I wanted something that could be made ahead of time. This was perfect! I did ground sirloin instead of veggies, since my dad isn’t much of a spinach guy, but I think it’d be great either way. I’d definitely make this again!

Thursday: Leftovers day!

Friday: A random mix of stuff that never got photographed. Pretty sure it included some wine, more leftovers, some of Lucas’s dinner (that went untouched) a few other things. It was, umm, not our finest dinner. BUT, if you’re looking for another idea to try, check out some of my previous meal plan posts, OR…

  • Sweet Corn and Chicken Enchiladas
  • Spaghetti and Meatballs in Tomato-Basil Sauce (planning on making these for the coming week!)
  • Spaghetti Pie
  • Italian-Style Crockpot Stuffed Peppers
  • Slow Cooker Lean Vegetable Beef Soup

Saturday: Pizza!

    The tomato soups looks amazing, I didn't realize it was so easy to make ! I just started doing meal prep for myself now that I'm working and it is a huge thing. I NEED to do it :)

    Your panini looks JUST like those Lean Cuisine ones. That’s impressive Courtney! I actually thought it was that. I need to get myself a panini press.
