This week gave us a few tough evenings in terms of trying to get dinner prepared while also tending to two beautiful and needy kiddos, so many meals were quick. And not too pretty either. But hey, that’s okay! One of these days we’ll all be sitting at the dinner table together, eating the same meals, not having to use bribery, or bouncing around the table while sneaking in bites of food while crumbs get dropped on your poor baby’s head.
Hey, I can dream right?
At any rate, even though dinner time was a bit crazy this week, we still had some yummy meals! Here’s a look…
Sunday: Leftovers – don’t even remember what I had?!
Monday: Chicken Quesadillas!
For these, I baked up a few chicken breasts in the oven and sautéed some peppers, onions, and spinach. I combined all of that with a mix of whatever cheeses we had and put them all in between a couple of LaTortilla Factory tortillas. We served them up with some (runny) salsa and plain Greek yogurt for dipping and they were delicious! Bonus? When you use the regular sized tortillas, it makes for a rather large quesadilla, so I ate 4 out of the 6 pieces for dinner had the others for leftovers the next day!
Tuesday: Leftover pizza + a frozen pizza
This was a particularly challenging night on the baby front, so it was sort of “find whatever we can to get on the table and eat.” I attempted taking that photo while bouncing around with Alex, so it’s not the greatest.
Wednesday: Skillet pork chops with Alfredo noodles and green beans
Jay took care of this entire meal (thanks, babe!) and he used this recipe from The Pioneer Woman for the pork chops. They were absolutely delicious and we would definitely make them again! Noodles and green beans both came from a bag, ha!
Thursday: We had leftovers, not so exciting. But if you’re looking for another idea, check out my Slow Cooker Lean Vegetable Beef Soup with a side of Cheesy Italian Quick Bread!
Friday: One Pot Cheesy Pasta Bake
This recipe was SO good, and SO easy! I loved how it used simple ingredients like lean ground beef and spinach (yay for sneaking in some veggies!). It made for a perfect meal as we wrap up our 30 Day Protein Challenge over here.
I’ll be sharing a wrap up of the challenge on the blog tomorrow, but it’s definitely been a very eye opening experience! Saturday: Still TBD at this point, but we have some chicken tenders in the fridge so I have a feeling we might be cooking up a batch of Healthy Baked Chicken Parmesan Tenders with possibly some side salads!

Things to Make This Week
To Snack On
Old Fashioned Apple Bread – I have some apples that aren’t quite great for eating whole but could definitely be used for baking so I’m hoping to get this baked up today!
For Breakfast
Mixed Berry French Toast Oatmeal (you could always sub chopped apples or pears + cranberries in place of the berries to make it more seasonal, too!)
For Lunch
Pumpkin Black Bean Soup – I love making a batch of this on the weekend to have for lunches during the week, especially now that the weather is cooler!
For Your Sweet Tooth
Pumpkin Caramel Chocolate Chip Cookie Bars – Because…why not? (Note to self: update those photos. Yikes)
