These things have been a bit sporadic these days, huh?
Truth be told, I’ve also been slacking a little bit on the meal planning front these past few weeks. It’ll either be a matter of a) planning a menu but not making it for a full trip to the grocery store and scrambling, or b) actually grocery shopping but x, y, or z happens and our plans change. Hey, such is life, right?!
At any rate, we had a bit of a pseudo-meal plan this past week so here’s a look!
Sunday: Simple and Tasty Beef Stew with crusty bread on the side
This is such an easy recipe and it’s really good, too! You can easily mix it up by adding in sweet potatoes or only doing white potatoes, and I also added some celery this time, too.
Monday: Leftover Cheeseburger Soup (we frozen some from the last time we made it) with crusty bread on the side
This soup is SO GOOD.
Tuesday: Tacos with shredded beef and jasmine rice on the side
I saw that I still had one more container of balsamic shredded beef in our freezer from when I made all of our freezer meals before Alex was born and it was perfect for tacos!
Wednesday: Chicken and Butternut Squash Gnocchi
I honestly can’t remember if we ate this on Wednesday or not, but I know we ate it recently so I’m including it here. It was a pretty good recipe, but I think it needed a little more seasoning or something.
Thursday: Baked chicken (marinated in Italian dressing) with butter noodles and green beans
Sometimes, a simple meal of chicken + sides just really hits the spot. This tasted really good!
Friday: Leftovers
Saturday: Out to dinner with some friends to celebrate the birthday! I got a super delicious cheeseburger.
