Weekly Meal Plan {2/22}

Happy Sunday to you all! Who’s ready for a little mean plan recap today? Well here we go!

Sunday: Leftovers/clean out the fridge (Spaghetti Pie + Valentine’s Day pasta)

Monday: Burrito Bowls topped with avocado and tortilla strips

This was actually from when we made it about a month and a half ago and we froze our leftovers. Unfortunately, it wasn’t that great the second time around…super mushy and bland. We LOVED the recipe the first time around though, so I think we’ve just learned to either cut the recipe a bit or just keep eating it that same week!

Tuesday: Easy Crockpot Chicken and Biscuits + green beans a baby carrots

I absolutely love how easy that recipe is. I don’t totally love the condensed soups (they’re a bit salty) and I know there are recipes out there for homemade versions of it…but then it defeats the purpose of it being “easy” so whatcha gonna do? If you want a version of this without the condensed soups, my Chicken & Biscuit Casserole is a delicious one!

Wednesday: Brinner! We had omelets with hash browns, strawberries, and leftover biscuits from Tuesday night’s dinner.

Jay made the omelets because he always does them SO much better than me, and he filled mine up with loads of spinach, peppers, onions, broccoli, and cheddar cheese.

I absolutely love breakfast for dinner – I just wish I could get Jay to agree to having it more often. Although, I think if we always had bacon on hand, he’d be more inclined to agree. Winking smile

Thursday: Trader Joe’s BBQ Chicken Pizza + big side salads

I already told you guys about this pizza…it’s SO good!

Friday: Jay ended up having to work late so on his way home, he picked us up from subs from DiBella’s.

I got the Chicken Philly (the same thing I got the first time we tried their subs after one of “Baby Tooth’s” last ultasounds!) on an everything roll with provolone, peppers and onions, lettuce, and tomatoes.

He got us “mediums,” and that there was only half of the sub! So I saved the other half for lunch on Saturday. Woop!

Saturday: Out to dinner with friends – details coming on Monday! Smile

I’ve already got my menu prepared for the coming week and am planning on getting my grocery shopping done this morning. The past couple of weeks, we’ve tried to cut back a bit with the shopping in an effort to clear out some of our frozen stuff, so I’m ready to get back to some fresh cooked meals!

    On the menu for me is lots of home cooked meals by my mum! So good :) that sub looked incredible though! I'm a big fan of the freezer for convenience but there is a lot to be said for delicious fresh produce :)

    I'm in such a food rut I have no idea what I'm going to make this week! I've been slacking on my veggie and protein consumption ... I'm thinking my veggie packed pasta and pan fried tofu w/rice and steamed broccoli.

    I want to eat with you guys. My mouth watered at every picture. This week for us is lemon asparagus chicken, baked sketti, and tortilla soup. I'm ready for a big fat salad and eating outside!

    I'm loving these posts, as they're giving me great ideas for new meals! Ironically enough, I have a batch of your veggie beef soup in the crockpot, which you linked to a few weeks ago. It smells delicious! I also marinated a bunch of chicken, baked it and chopped it up for salads. I'm headed back to work tomorrow after three months of maternity leave. As a fellow working mama, any advice? I know it will be quite an adjustment that's for sure!

    I'm always so impressed how other working moms have actual "meals". Every day. All week long. Like... not a frozen/microwavable food in sight. I keep waiting for that kind of inspiration or dedication or whatever you want to call it to hit me... I turn 36 next week, so maybe I should just give up the dream & accept my canned soup and grilled cheese existence? Lol... :)
