Who’s got their menus prepped for the week to come already???
I, unfortunately, do not, so I have a little bit of work on my hands today. Plus, I’m trying my best to just pack a bunch of stuff up (despite the fact that I’m sure I’m going to need/want it as soon as I do), so I’m trying to keep our dinner options fairly simple from here on out before the move. We’ll have to see what I can come up with…but for now, here’s a look at our meals from last week. Softball season has arrived so, as you’ll see, things are getting a bit more “casual” in the dinner department.
Sunday: Mother’s Day cookout with cheeseburgers, hot dogs, salad and potatoes (YUM!)
Monday: Grilled chicken with strawberry avocado salsa (similar recipe HERE) and brown rice
Tuesday: This was that random night of leftovers that wasn’t all that exciting…but if you’re looking for an idea, why not try whipping up something with some eggs for dinner?
- Veggie Fritatta
- Veggielicious Egg Casserole
- Broccoli, Ham, and Mozzarella Baked with Eggs
- Easy Breakfast Casserole with Sausage, Hashbrowns, and Eggs
Wednesday: The Best Ever Chicken Salad in lettuce cups with herb flatbread
Thursday: Cheeseburgers (open faced on leftover flatbread) with sauteed onions, zoodles, and Annie’s mac & cheese
A nice little mix of everything, right? We had no buns on hand for the burgers, but the leftover flatbread worked perfect. I cooked up the zoodles for myself (similar to how I did here) with my spiralizer, and also helped myself to a scoop of the mac & cheese that I made for Lucas and Jay. Super tasty and lots of variety.
Friday: Takeout grilled chicken salads from LaBella’s
Saturday: Out to dinner for pizza at Pizzeria Uno!
BBQ Chicken flatbread for Jay, deep dish tomato and cheese with spinach and roasted veggies for me (I’ve been craving deep dish pizza for what feels like forever now), and mac and cheese with broccoli (which Jay and I ate…) and grapes for Lucas.
Totally hit the spot!

Chicken Salad looks awesome! Made super crunchy sweet potato chips, slow baked with coconut oil and chipotle burgers, probably the meal of the week. LOVE avocado and strawberry salsa, great with salmon too!

Yum, everything looks and sounds great! I actually just purchased my own spiralizer and made zoodles for the first time last night! I actually bought the one you posted about and was so pleasantly surprised to see how easy it is to use!

I just wanted to say how much I enjoy reading your meal plan posts, as opposed to other blogs. When they are written for the week ahead, I always wonder if all these fantastic sounding meals actually come to fruition (due to just life that gets hectic). I like reading about all your meals that actually took place amidst your busy life! :)

this week i’m eating some pasta leftovers from last week, salads, and TJ’s potstickers with veggies and rice. feeling lazy about cooking so i picked up some quick meals at TJ’s and cut up lots of fruits and veggies to have throughout the week.

wow this post just brought back alllll the memories for me — when i was living in Loudonville/Menands and going to grad school at St. Rose, i waitressed at that Uno’s! i actually loooved waitressing (prob my fave job i’ve had — nothing like being active and just talking to people!) and had a blast there. that BBQ pizza flatbread was always one of the most popular orders! :)

Pizza joints are my favorite places to go when eating out! I am thinking a trip to a local one is in store for me this upcoming week!
