This week’s meal plan is…sad.
Truth be told, I never ended up doing a real grocery shop last week, so we were scrounging a bit and picking up a couple things here or there all week long. Needless to say, I’m more than ready for a FULL shop today!
But in the meantime, here’s a look at some “dinners” from this past week.
Sunday: Can’t even remember. No pictures of proof and neither Jay or I can recall?!
Monday: Breakfast for dinner! Homemade pancakes, scrambled eggs, and bacon – perfection.
Tuesday: Tacos – I swear, I’m going to start making these every. single. week. It’s SUCH an easy weeknight dinner. Just brown the meat, get your toppings ready, and that’s IT.
Wednesday: Egg + provolone sandwich, which you already heard about.
Thursday: Jay had a softball game and I didn’t feel like cooking, so I had the other half of my chicken fajita roll up from a lunch with co-workers earlier that day (at Applebee’s).
Friday: Dinner at Sarah and Jeff’s house! A slice of buffalo chicken pizza + side salad
Saturday: Pasta with mom’s homemade sauce and meatballs
Even better? I didn’t have to cook or clean a thing – mom came over and did it all! Thank goodness for moms, am I right?!
Well guys, I’m running out of time before I need to go take care of some stuff around the house, so forgive me for skipping the breakfast/lunch/snacks portion of the meal plan for this week! Of course, feel free to check out the archives for past meal plan ideas and inspiration!

your “breakfast for dinner” has me rethinking my planned meal for tonight. pancakes and bacon are ALWAYS a good idea!

Our meals last week were scrounged up too! even had toast one night.
Does Lucas have dinner with you and your husband? We do family dinners but I’m considering giving our 18 month old dinner earlier. We’ve done family dinners for six months and it doesn’t seem to be getting easier in terms of him eating a decent portion and/or not throwing his food everywhere :-/

It totally depends on the day. I’d love it if we could swing it everyday, but sometimes, it just doesn’t work and Lucas needs to eat earlier. It’s tough when they’re young!
