Weekly Meal Plan {9/20}

Well hellooooo and happy Sunday to you! Are you having a fabulous weekend??

Things over here have been BUSY. We spent a good majority of yesterday working outside, and when we weren’t working outside, it was inside. Ohhh, how there are ALWAYS projects to be done!

Anywho…we’re hoping for a little relaxation time today and then looking forward to some visitors later this afternoon which should be a blast. But for now, it is Sunday and all, so here’s a look at our dinners from this past week. Nothing too crazy, and most of it was thrown together SUPER quick (aka, I didn’t meal plan last week…). But it all turned out okay – a good mix of healthy and comforting.

Sunday: Grilled chicken with side salads

Monday: Grilled steak with baked sweet potatoes and veggies (a frozen blend of yellow carrots, spinach, and white beans – pretty good!)

Tuesday: I think I finished up the leftover Light ‘n Easy Cincinnati Chili if I remember correctly? Jay was working late and I didn’t feel like cooking anything special. But I WILL say that I’m really looking forward to some more chili soon. I’m hoping to make a batch of Mal’s Easy Chili (one of my favorites!) or another one that we made last year. It was SO good, but I never wound up sharing the recipe…perhaps I’ll have to get on that soon?!

Wednesday: Dino nuggets (Smile) with a baked sweet potato and some sautéed peppers and onions

This meal was actually thrown together on a whim around 8:30pm. Jay and I had already enjoyed a couple glasses of wine and were debating on just snacking our way through dinner. We realized that probably wouldn’t be in our best interest, so he heated up some leftovers and I cooked up some dino nuggets along with the leftover sweet potato and peppers/onions. For being thrown together last minute, it wasn’t too bad.

Thursday: Pasta with homemade sauce and meatballs + garlic bread

I mean, who doesn’t love garlic bread??

Friday: Jay and I were both in no mood to cook, and after him having a long day at work, I told him I’d take care of dinner…aka, I’d order pizza.

Half plain cheese, half Hawaiian – x2.5 pieces for me!

Saturday: Grilled steak with pasta salad

Plus some cookie dough ice cream with sprinkles for dessert.

Any if anyone tries telling me that rainbow sprinkles are “wrong” for an adult, then I don’t wanna be right. Winking smile

Sorry for the late post today – I thought I scheduled this to go up last night but apparently I did not!

    Love the nuggets making an appearance! They would be a go-to for me on lazy nights as well. The star of this week is certainly that pasta and garlic bread though! Have a fantastic week, Courtney!
