Good morning and happy Wednesday to you all! Halfway to Friday…gotta love that!
So I decided to jump on board the WIAW train again today. It’s been a while since I’ve done one and since I always enjoy reading them, I figured I’d switch it up a bit.
My eats lately have been ALL over the place. So, honestly, what I ate on Monday (featured in today’s post) was entirely different from yesterday. Part of that reason for that was because I was able to be home with Lucas on Monday! I took the day off from work since his daycare was closed, and it was so nice to have a day at home with my little guy.
Since I was home, I had access to way more food than I would when I’m at work, and that means one thing…more goodies and more snacks! So here’s a look at all of my eats from Monday. And I did try to capture just about everything!
A scrambled egg, some strawberries, and a warmed up Cinnamon Chip Scone. No coffee today…wasn’t feelin’ it.
Those scones…gahhh, I can’t resist! And the breakfast kept me full for a surprisingly long time.
Lucas and I did lots of playing around all morning. I also squeezed in a PiYo workout while he watched an episode of Paw Patrol right next to me. Shortly after my workout was over, I found myself in the kitchen snacking on some grapes, after giving some to Lucas.
And then I found myself in front of the pan of leftover cornbread. It started with one “sliver,” then two…then I eventually wound up eating a piece and a half.
You’d think by now I’d just know better and take out the full piece.

Lucas also had a random mix of stuff…all of which he ate, except for the chicken.
I just cannot get this kid to stay interested in chicken.
Once I finished up a shower and got ready while Lucas napped, I headed downstairs and grabbed a Dark Chocolate Walnut CLIF Kit’s Organic bar. I know I’ve been mentioning these for the past couple of weeks but I seriously can’t get enough of them.

Unfortunately, I had a wake to attend for a family member. So since we weren’t going to be eating dinner until a little later, I knew I should eat something, even though I wasn’t super hungry. I debated on having an apple…
But ultimately just ended up snacking on a piece of Italian bread with peanut butter (no photo) and then ate a leftover caramel oatmeal bar (very similar to this pumpkin variation I made!) leftover from Friendsgiving.
Some delicious grilled steak salads with sautéed peppers and onions and feta cheese!
I got a random craving for these after coming across an older post of mine from this summer, so I put them on the menu. A nice change up, since this tends to be more of a spring/summer menu item for us.
Nothing like a nice, delicious bowl of chocolate chip cookie dough ice cream to round out the evening. I seriously love. that. stuff.
