These cinnamon chips are not always the easiest to find so if/when you spot them, be sure to snag a bag or two…or you can buy them right on Amazon (<–affiliate link).
It’s no secret that I love me a good quick bread. They’re just that – quick – and they’re so darn easy that there’s just no excuse not to make them. This bread took no more than 10 minutes to whip up and within no time, the house was smelling fabulous.

If you decide to give this bread a try, I promise that, within less than an hour, you’ll be digging in to one of the best things you’ve eaten all day.
**Edited to add: I’ve had many comments from readers saying that this bread took a bit longer to cook than the original cook time, so I’ve adjusted the recipe below to include a range. I’d recommend starting your timer at the lower end, then just continue to check it every 5-10 minutes or so until a toothpick entered in the center comes out clean.
Cinnamon Chip Studded Snickerdoodle Bread
Ingredients
- 1-1/4 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 stick butter softened
- 1 cup sugar
- 2 eggs
- 1/2 tsp vanilla
- 1 container about 5 oz plain Greek yogurt
- 3/4 – 1 cup cinnamon chips I say go closer to the full cup!
- 1 tbsp sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 350 degrees F and spray a 9×5 loaf pan with non-stick cooking spray.
- Cream butter and sugar until fluffy. Add eggs, mix well, then add vanilla and Greek yogurt, mixing until well incorporated. Mix flour, baking powder, salt, and cinnamon in a separate bowl. Add cinnamon chips and toss to coat. Add to wet ingredients and mix until all combined.
- Spoon batter into loaf pan. Mix 1 tbsp sugar and 1 tsp cinnamon in a small bowl and sprinkle over the batter. Bake at 350 for 45-65 minutes* or until a toothpick inserted in the center comes out clean. Let cool before removing from pan (if you can) and enjoy!

My mom would LOVE this bread. I tried baking with those cinnamon chips before and they have a REALLY strong flavor. I couldn’t even snack on them because it’s a “WOAH” kind of taste.

Saw this recipe yesterday morning and just happened to have a bag of cinnamon chips laying around. Got off work for a snow day so I was able to bake yesterday afternoon. I made muffins instead of a loaf and brought them in to work this morning (yes, I shared!). Everyone raved about them! So good and even better if they’re warmed up for a few seconds in the microwave! I took it out after 50 minutes because I knew the outside couldn’t take any more. It did set up enough to eat. I used a pan that was 8 1/2 x 4 1/2. Wonder if that little of a size change would make a difference? I will try again to make sure I didn’t mess something up. Thanks!

Marsha, I had to bake it a lot longer too. Most quick breads take longer than 38 minutes to bake, at least all of the recipes I have take more time. This recipe has amazing flavor though so next time I’ll use a regular metal pan instead of a stone. I’ll definitely be making this bread again.

This smells wonderful while baking and tastes very good as well. I baked it for 38 minutes and it was raw in the middle. I baked it for about 20 minutes more until it was done and let it cool in the pan for about 10 minutes before taking it out. The bottom and sides are very dark but it doesn’t taste burnt. Has anyone else had this happen? I used a Pampered Chef stone loaf pan. Maybe next time I’ll decrease the bake time and use a different pan.

Hey Elizabeth! I’m not really sure – the greek yogurt gives it such a great texture and flavor! But you could probably try applesauce or oil (or a mix of both?)

Do you bake at 350 in convection? I always have a slightly underdone center so I was trying on convection setting at 325 and its been almost an hour and still goo in the middle.

Thanks so much for this recipe!! I made this for a Labor day bbq and it is delicious. I had to bake mine for around 1hr and 20 minutes and put a little extra vanilla extract and cinnamon in mine, but that was just fine. Absolutely awesome, I’ll definitely make this many more times. Yummy!!!!!

Great recipe, it would be great if it could be edited to note the variable baking times (mine ended up close to 1hr and 15 minutes. I’ll definitely make again, but the first time was a bit of a mess as it was mostly goo in the middle.
