Sun-Dried Tomato & Mozzarella Quick Bread

This Sun-Dried Tomato and Mozzarella Quick Bread is the perfect pairing for your favorite soup, stew, or salad. It cooks up super quick, making it a great addition to your weeknight rotation!

I’m a total sucker for carbs. Especially when they’re paired with a warm, comforting bowl of soup. It just makes for the perfect combo, if you ask me.

The only thing with homemade bread is that, most days, I don’t have the time (or memory) to mix up the dough hours beforehand to be able to wait and let it rise. This busy mama ain’t got time for that!

So that’s why I’m obsessed with quick breads like this one.

I actually first introduced this recipe way back in 2012, when it was paired in with my recipe for Italian Style Tomato and Meatball Soup (<– SO good, by the way!).

The inspiration for this bread actually came from my Cheesy Italian Quick Bread, which is another favorite of mine. Same idea, but the extra flavor from the sun-dried tomatoes really shines through.

Sun-Dried Tomato & Mozzarella Quick Bread

This bread is full of flavor and can QUICKly be thrown together to pair with your favorite soup, stew, or salad!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup mozzarella cheese
  • 1/4 cup sun-dried tomatoes, packed in oil and roughly chopped
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 3 tablespoons cold butter
  • 1 egg
  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk
  • 1/4 cup mozzarella cheese

Instructions

  1. Preheat oven to 400 degrees F. Spray a 9-inch round baking pan with cooking spray; set aside.
  2. In a large bowl, combine the first 10 ingredients and mix well. Cut in cold butter with a pastry blender (or two knives/forks) until mixture is made up of fine crumbs.
  3. In a small bowl, whisk together egg, Greek yogurt, and milk. Stir into dry ingredients until just moistened – do not over mix! (If your dough is still a little dry, add an extra splash of milk).
  4. Spoon into prepared baking pan, sprinkle with remaining 1/4 cup cheese and extra butter, if desired. Bake for 20-25 minutes or until light golden brown. Cool slightly before serving. Enjoy!

    Quick breads are the best! Have you tried Irish Soda Bread? Another quick and easy one perfect for dunking ;). I will have to give yours a go as I actually have all the ingredients on hand...it's a sign haha

    Hi Courtney! Do you think this recipe would work with regular chopped tomatoes, rather than Sun dried tomatoes? Thanks!

      Hey Lauren! Tough to say...regular tomatoes would have a lot more liquid and might change up the consistency of the bread a bit (plus they also have a very different flavor!). I'm not sure I would do it, but of course, you're more than welcome to try!

    I made biskits for dinner the other night to go with my special jamabalaya but my kids threw it in my neighbors yard over the fence cause it was from my mcdonalds breakfast. Picky eaters! I can't. #CANT
