Hey, long time to see, meal plans!
I wound up taking a couple of weeks off from the meal plans, after a lack of planning and not-very-exciting dinners. Hey, it happens, right?
I always find it tough to get in the meal planning groove around the holidays, with everything that’s always going on. But I’m trying my best to stick with it, since it’s too easy to just wind up snacking on Rudolph’s Mix and PB&J crusts for dinners if I don’t plan ahead…
So here’s a look at what we had last week..and as you’ll see, we used the slow cooker ALL WEEK!
Sunday: Slow Cooker Bacon Cheeseburger Soup + some crusty bread on the side
This soup was absolutely delicious. Thumbs up from everyone over here! We’ll definitely be making this again.
Monday: Slow Cooker Chicken Taco Bowls with rice and avocado
This recipe was certainly easy enough to put together, but it wasn’t anything overly thrilling. I think it could have used a little more seasoning, so I’d probably try to add a little something extra if we did it again. I also couldn’t tell by the recipe if the ground chicken should have been browned before going in the slow cooker, but I did it anyway because I felt like it would be weird if I didn’t…?
Tuesday: Slow Cooker Chicken Caesar Sandwiches on mini slider buns with fries
This is always a delicious and easy recipe that I tend to forget about. Chicken thighs were on sale last week so it made for an easy and CHEAP meal.
Wednesday: Leftovers day for us!
Thursday: Out to dinner with the girls at Druthers. I got the turkey melt and it was incredible.
Friday: Slow Cooker Beef and Beans Chili + Cornbread (we used this recipe – SO GOOD!)
If you haven’t already tried this chili recipe, promise me you will this winter??? It’s our new favorite (well, besides Mal’s famous chili!)
Saturday: Out to dinner after the Polar Express (more to come!) – a Reuben sandwich + sweet potato fries

I really need to invest in a slow cooker. I feel like after busy days of work and classes it’ll make my life so much easier and I wont order out as much! What slow cooker do you use?!

All of these foods look delicious and heavenly, Courtney! Unfortunately, my slow cooker broke 2 weeks ago, but I’ll be buying another one to cook these! :D
