Weekly Meal Plan {4/29}

Happy Sunday! I’ve got another meal plan for ya!

Of course, you can always feel free to check out the archives of the meal planning posts – I consult them quite frequently myself.

Here’s a look at this past week…

Sunday: Chicken and veggie stir fry with rice

I made this stir fry sauce recipe, which was delicious, and cooked it up with some chicken breast strips and some fresh stir fry veggies (broccoli, peppers, onions, asparagus) with some quick, instant rice on the side. I would have opted for brown, but we were out, and the boys each had their own portions of this meal which went over so-so (the rice was the biggest hit).

Monday: Baked pork tenderloin with homemade mashed sweet potatoes and tarragon glazed carrots

I did another batch of our new favorite mashed sweet potatoes, and we did another one of our quick and easy tenderloins. The carrots were leftover from our Gorsky’s Farm delivery from the week before, and both boys also ate and enjoyed everything from this meal (except for the carrots for Alex…he’s proving to be not much of a veggie guy).

Tuesday:Out to eat at Druther’s – beer cheese pretzels + the most amazing roasted beet salad!

Wednesday: Egg scramble with sauteed veggies, chicken, cheese and roasted potatoes

My original plan was to do omelets with roasted potatoes, but since I tend to want to add all. the. things. to my omelets, they never seem to hold up too well. So everyone else had omelets with roasted potatoes, and I made mine all sorts of messy and delicious (peppers, onions, chicken, tomatoes).

Thursday: BBQ chicken and veggie quesadillas

Jay and I were still using up our ingredients from the Gorsky’s Farm delivery last week (when you order the quesadilla kit for the 2 family kit, you seriously get enough to feed a small army). We loooove making these because we always wind up with leftovers for lunch the next day, too. The boys will eat cheese quesadillas with chicken and some veggies on the side.

Friday: BBQ chicken in the Instant Pot with chips and guacamole on the side

(recycled photo) The chicken was a last minute decision, so rather than using the crockpot, Jay decided to use the Paula Deen recipe that we really like and threw it all in the Instant Pot. Worked like a charm, and done in less than 30 minutes!

Saturday: Homemade chicken bacon ranch GRILLED pizza!

Hoorayyy for the first grilled pizza of the season (you can read more about how we make them in this super old post, or this one)! Jay put together a quick, no-yeast dough, and we kept it easy by using a rotisserie chicken. This was delicious, and I thoroughly enjoyed two hearty pieces.

The boys were hangry (and are also picky about their pizza if it’s not coming from the delivery guy at the front door) so they had rotisserie chicken, broccoli, cheese, and applesauce. I should really start taking a picture of their meals, too!

    Can you share your "no-yeast dough" recipe? I prefer my crust to be crispy and not a lot of crust either. I can't seem to get that with traditional pizza dough.

    I old my man that i wanted some pretzel break and beer cheese from Druthers and he the aurdacity yo come with a bag of Roll Gold pretzels and some melted Kraft singles still in the plastic wrap with beer in a saucer! I was annoyed so i didnt leave him warm water for the shower this morning! Happy week Courntey!
